Magaz Malai Paneer | Cottage Cheese in Creamy Melon Based Sauce

In India, especially on the Northern Side like Delhi and Punjab, whenever there is a party or a get-together planned at home, one dish that is a must-make for sure, has to be paneer (cottage cheese) based. While many a times I go either for Paneer Dhaniya Adraki Korma , Paneer Butter Masala , Shahi Palak Paneer Kofta Curry or Kadhai Paneer , this time I opted to experiment with flavors keeping them plain, simple and subtle. Trust me, the dish turned out to be super awesome and left my guests licking their fingers till the last bite.    To tell you more about this paneer recipe, its heart and soul is the gravy which is made using the paste of melon seeds, a little milk and a dollop of fresh cream. What lends it a touch of spice is only a couple of green chilies and black pepper powder. I am always on a look out for recipes that are easy and quick to put together. One of my favorite amongst such recipes is of classic Spaghetti Aglio-e-Olio . Simple boiled pasta drizzled with garlic infused olive oil, a dash of chili flakes and some Parmesan makes for a perfect week night dinner when I am too tired or lazy to make anything elaborate. While this simple and vintage recipe in itself is such flavorful and aromatic, yet at times it may feel a little boring to have it the classic way. Hyderabadi Mirchi ka Salan is a dish which is known globally...I also wanted to try this popular delicacy but, short of the must-ingredients peanuts and sesame seeds, I instead decided to give it a Punjabi twist that too in a tongue-tickling " achaari " style. To my pleasure, it came out really well and simply tasted divine with steamed rice, salad and some papad on the side.
