Ingredients

  • Whole Wheat Flour - 1.5 cups
  • Cocoa powder - 2 tbsp
  • Powdered sugar - 1 cup
  • Plain curd/yogurt - 1/2 cup
  • Milk - 1/2 cup
  • Olive oil - 1/2 cup
  • Vanilla extract - 1 tsp
  • Baking powder - 1.5 tsp
  • Salt - 1/4 tsp
  • Melted chocolate - 1/8 cup
  • Chocolate rice/chips - 1/8 cup + few to sprinkle on top of muffins

Method

1. Start your oven to preheat at 180 degrees C and line an 8 cup muffin tray with cupcake liners.

2. In a bowl, sift together flour, baking powder, cocoa powder and salt. Do this twice. Set aside.

3. In a separate bowl, whisk oil and sugar until combined nicely. You can do it manually using a hand whisk or use an electric whisk.

4. Next, add vanilla extract, yogurt and milk. Again whisk them nicely until combined well. Mix in the melted chocolate too.

5. Now, fold in the dry ingredients along with chocolate chips or sprinkles to the wet mixture in three batches. Just mix until combined; do not overmix. Also, the batter should be little thick than a normal cake batter. If it seems too thick, just add about a tbsp of milk to it.

6. Now scoop out the batter in lined muffin tray cavities. Fill them just 2/3rd.

7. Pop the muffin tray in the preheated oven and bake on the middle rack for 25 to 30 minutes or until a skewer inserted in the center comes out clean.

8. Stand in the pan for 5 minutes and then transfer on a wire rack to cool completely.

9. Enjoy whenever you like.
