Instant 3 Grain (Quinoa, Oats, Semolina) Dhokla | 3 Grain Savory Steamed Cake

Dhokla is a savory steamed cake often made from fermented batter of lentils and rice; this light, fluffy and spongy snack finds its origin in the state of Gujarat, India. Well! for me, it is one of the most healthiest and delicious snacks that I love to devour anytime of the day, be it in breakfast, as a mid day munchie or along with my evening cuppa. Having said that, prepping for this delectable savory cake is a long and tedious task - soaking the lentils and rice overnight, grinding them to a batter and again resting it for fermentation - so you know what I mean to say right? 😂 Therefore, I am always on a lookout for recipes that are quick and simple yet yield the same result that we get going the traditional way. If you remember the KHAMAN DHOKLA that I made last week, it was one of those quick and instant snacks that require no long waits and come out as scrumptious as their conventional counterparts.

This 3 Grain Dhokla is yet another one such instant recipe that is palatable yet comes on your table in just under 45-50 minutes. Plus, made with three wholesome grains: quinoa, oats and semolina, it is quite healthy and nutritious. It wont be incorrect to say, it is one of the ideal recipes for weight watchers and those struggling to shed few extra kilos. Just to let you know, quinoa and oats in this dhokla are rich in fiber content that keeps you full for a longer time, thus reducing your appetite and calorie intake, eventually helping you shed the weight. I must say, this recipe should come handy for diabetics too as both quinoa and oats are considered to be Low Glycemic Index Foods that control and maintain blood sugar levels in the body. Just in case you are anemic or scuffling with cardiovascular issues, go for this instant snack because it also contains semolina that is considered a rich source of iron and selenium (known for boosting cardiovascular health).

Quite a simple and easy one, all you need to do is grind the three grains to a fine powder (you can also store this powder in an air tight container for later usage), mix it with some basic spices, yogurt and water, finally popping the batter to steam till the time its done. Just a little pointer; if you are gluten intolerant skip the semolina and replace it with same amount of quinoa.

Instant 3 Grain (Quinoa, Oats, Semolina) Dhokla | 3 Grain Savory Steamed Cake


Ingredients

  • Quinoa - 1/2 cup
  • Semolina (sooji) - 1/2 cup
  • Rolled oats - 1/2 cup
  • Thick yogurt - 1/2 cup
  • Water - 1 to 1.5 cups
  • Salt - as per taste
  • Ginger-Chili paste - 2 tsp
  • Lemon juice - 1/2 tbsp
  • Sugar - 1 tbsp
  • Fruit salt (eno) - 3 tsp
For tempering
  • Mustard seeds - 1 tsp
  • Oil - 1 tbsp
  • Cumin seeds - 1 tsp
  • Curry leaves - a few
  • Green chilies (slit) - 2 to 3
  • Asafoetida (hing) - 1/2 tsp

Method

  • Start with dry roasting the three grains in a pan on medium heat until you start smelling a nutty aroma.
  • Dish them on a plate and grind to a fine powder. You can make this powder in a big batch and store it an air tight container for later use.
  • Sift the powder through a mesh. Add in salt, ginger-chili paste, lemon juice, sugar, yogurt and little water at a time to make a thick yet pourable batter just like the consistency of idli batter.
  • Let this batter rest for 15 minutes.
  • In the meanwhile, prepare steamer, pressure cooker or any vessel in which you would like to steam the dhokla.
  • Grease your steamer pan or the baking tin.
  • 15 minutes would have passed by now; add in fruit salt in the batter and give a nice whisk. Immediately pour it in the greased pan or tin. Pop it in the steamer to steam for about 20 to 25 minutes.
  • Insert a toothpick in the center of the dhokla to check its doneness. If it comes out clean, its cooked else let it steam for another 4 to 5 minutes.
  • Take out the tin and let dhokla cool down completely.
  • Run a knife through edges of the tin and invert the dhokla on a plate.
  • For the tempering, heat oil. Add in mustard and cumin seeds. As soon as they crackle, switch off the flame. Add the hing, curry leaves and slit green chilies.
  • Pour this tempering on the dhokla and cut into pieces. Serve warm.
