Pineapple Chicken Fried Rice

Pineapple Fried Rice is a classic recipe from the Thai cuisine which essentially has prawns added for the dose of protein. I have, however, tried to give the beautiful recipe a twist by using the chicken instead of prawns. You can, however, go and add any protein that you like or even skip it altogether. Also, do try to always use the fresh pineapple instead of the canned one as the latter has a high sweet content. Just in case, you only have the option to use the canned pineapple, drain the syrup, wash the pineapple and dab with a kitchen towel to get rid of excess sweetness. As for the sauces, feel free to use any you like; for example, if you like extra spice, try to go for sriracha which will surely add that nice kick. Let's get onto the recipe now... Gujarati Fajeto | Ras No Fajeto | Ripe Mango Kadhi

Fajeto is a famous curry recipe from the state of Gujarat. Made with a mixture of sour curd, gram flour and ripe mango puree, it is an ultimate delight loaded with tongue tickling "khatta-meetha" flavors that go oh so well with some plain steamed rice and papad on the side. Traditionally, Fajeto is light on the palette and does not have any pakodas added to it, but me being a Punjabi, have added onion and spinach pakodas to the recipe for that extra zing; you are free to skip them altogether. Also, while making this kadhi make sure that the curd is really sour, if not so, it might result in a kadhi that is overly sweet which shall ruin all the taste. Being hardcore Punjabis, Chholey is something we have grown up eating. Appe , also known a Appam or Paniyaram,  is one of the traditional breakfasts served in almost every South Indian household. Authentically they are made using fermented rice flour batter (same way as in idli and dosa), but, since its a tedious and time taking process soaking, grinding and fermenting the rice, these instant oats & rava appe make for a quick and easy alternative. Also, loaded with whole lots of veggies, they certainly provide for a nutritious, healthy and yummilicious option, perfect to pack for your kids' lunch box too. Ideally they go very well with South Indian coconut chutney , in case that is not readily available, they can be served with coriander-mint chutney or tomato ketchup as well. Petha !! well I know most of the people hate eating petha or kaddu. Especially if I talk about children, they always shy off such healthy green vegetables. In my case too as a kid, I never liked it much until my Mum came up with this finger-licking version of the same that simply tasted divine with a perfect balance of sweetness, sourness and spiciness. Since then, one of my absolute favorites, I often make it now for lunch during the weekends and enjoy it with crisp pooris or even plain parantha and some boondi raita on the side. This is also one of the most demanded delicacies at my home during the Navratri fasts.
