Instant Bedmi Poori

Bedmi Poori is a traditional North Indian fried bread (poori) that is stuffed with a delicious filling of a coarse urad dal paste, subtly flavored with aromatic spices like fennel and hing. Having said that, there are two ways of making this flavorful poori: one, wherein the urad dal mixture is added directly to the flour and kneaded into a dough. This dough is rolled into discs and later fried. The second method calls for filling the urad dal mixture inside the dough balls and then rolled into discs to be fried. The recipe I am sharing is the latter one where the pooris are stuffed with the dal filling. Ideally, the dal filling that goes inside the poori requires soaking the dal for 6 to 8 hours before grinding to a coarse paste. However, one may not love the idea of waiting this long to enjoy the bedmi pooris, therefore, I have come up with this instant recipe of the poori for which you would not have to wait for a long time. Poha in Marathi language means flattened or beaten rice, Kanda means onions and batata refers to potatoes, hence its the flattened rice made along with potatoes and onions. Not to mention, it is one of the most famous and delicious breakfast recipes from the Maharashtrian cuisine. Often, it is also made as a quick snack recipe good to enjoy with tea in the evening. Easy to cook, yummilicious in taste, low in calories and loaded with the goodness of veggies, vermicelli upma or  vermicelli pulav   is by far one of the most popular breakfast dishes all across India, although the style and way of making it varies from person to person. For example, I first boil the vermicelli separately and later toss it in cooked veggies, whereas there are people who cook veggies and vermicelli together. The only problem I face with the latter style of making this upma is that it often comes out mushy and that is the reason I avoid going that way. Poha or the flattened rice flakes are indeed one of the most common breakfast delicacies enjoyed all across India, though the preparation for the same varies from region to region and state to state. Having said so, one thing which remains common amongst all varieties is the addition of a number of veggies and nuts that makes it a wholesome meal, full of essential nutrients and fiber. And yes, since its very low on gluten, it can be easily consumed by people sensitive to wheat and barley too. The best part is, whenever you are in a hurry to fix some quick breakfast for your loved ones, poha always comes to your rescue and it definitely came to mine as I was in a big rush today morning.
