Cheddar & Dried Cranberry Stuffed Garlic Knots !

A popular item on most of the pizzeria menus, garlic knots need no special introduction. These delicious and puffy knots oozing with flavors of garlic (and other spices like dried oregano/rosemary) are truly a treat for any Italian food lover. I gave them a try in my very own home kitchen and to my joy, they came out really well and fluffy. The stuffing of cheese and dried cranberries further elevated their rustic aromas and left both, me and my husband licking our fingers till the last bite. Ingredients

All purpose flour (maida) - 3 cups
Water - 1 cup
Olive oil - 2 tbsp
Sugar - 1 tsp
Salt - 2 tsp
Active instant yeast - 1 sachet (7 gms)
Dried cranberries (chopped) - 1/2 cup
Cheddar cheese (grated) - 1/2 cup
Butter - 1/4 cup
Garlic cloves - 3 big pieces
Garlic powder - 1 tbsp
Dried rosemary - 2 tsp
Chilli flakes - 2 tsp
Chopped coriander - a handful

Method

1. We will first start making the dough. For that, heat water to a level that you can easily immerse your finger in the same.
2. Add in sugar and yeast in the warm water and let it sit for about 10 minutes so that yeast gets activated. If after 10 minutes, you see the water to be foamy, that means your yeast has properly activated. This process is called proofing.
3. Now take the all purpose flour, add in salt, olive oil and proven yeast. Knead a soft dough out of it.
4. Grease the dough with some oil, cover it with a kitchen towel and let it rest at a warm place for an hour - hour and a half or until it gets double in size.
5. Once the dough has substantially risen, take it on your kitchen platform and knead again for 3 to 4 minutes.
6. Divide the dough in equal lemon sized balls. Roll out each ball in a thin long sheet (6 to 7 inches).




7. Sprinkle some cheddar cheese, chopped garlic, garlic powder and dried cranberries in middle of the sheet. Now, seal the dough sheet by pinching the ends together.



8. Make a knot out of these rolled sheets and place on the oven tray and again let rise for around 30 minutes.



9. Meanwhile, Melt the butter and add in chopped garlic, rosemary, chopped coriander and chili flakes. Set it aside.
10. Preheat the oven at 180 degrees centigrade for 10 minutes.
11. Brush the knots with some butter and pop them in the oven for 30 to 35 minutes. Your garlic knots should be ready.

Just out of the Oven !


12. Let the knots cool for about 5 minutes after which roll them in the butter, coriander and cranberry mixture. ENJOY hot!
