Homemade Whole Wheat Pita Breads on Skillet!

On my recent visit to one of the famous Lebanese restaurants here in Singapore, I was instantly taken by their big, fluffy and melt-in-mouth Pita Breads; an absolute contrast to the thick ones which we normally get in the super-markets and grocery stores. So impressed by their thinner and lighter texture, I could not resist myself from once again fiddling with the dough, the very next day in order to make these soft beauties. To my greatest joy, the results were simply awesome - warm and soft Pita Breads, which my family thoroughly enjoyed with falafel and hummus.


Ingredients

All purpose flour (maida) - 1 + 1/2 cups
Whole wheta flour - 1 + 1/2 cups
Milk - 1/2 cup
Water - 1/2 cup
Active dry instant yeast - 2 + 1/4 tsp
Salt - 1 tsp
Sugar - 1 tsp
Olive oil - 2 tbsp

Method

1. We will first start making the dough. For that, combine water and milk and heat to a temperature that you can easily immerse your finger in the same.
2. Add in sugar and yeast in the warm milk-water concoction and let it sit for about 10 minutes so that yeast gets activated. If after 10 minutes, you see the water to be foamy, that means your yeast has properly activated. This process is called proofing.
3. Now take the whole wheat flour and all purpose flour; add in salt, olive oil and proven yeast. Knead a soft dough out of it.
4. Grease the dough with some oil, cover it with a kitchen towel and let it rest at a warm place for an hour - hour and a half or until it gets double in size.
5. Once the dough has substantially risen, take it on your kitchen platform and knead again for 3 to 4 minutes.
6. Divide the dough in equal lemon sized balls. You should get around 8 balls. Cover them with a kitchen towel and again let them rise for about 30 minutes.
7. After 30 minutes, roll each ball in a 1/4 inch thick discs.
8. Heat a skillet and place a dough disc. Cook it until you start seeing bubbles on its top side. It may take around a minute or so. Now, flip it over and cook the other side too.

This is what you will get in the end, soft and fluffy pita breads; and they would have pockets too. Enjoy them the way you like.
