Chatpata Mumbai Tawa Pulao
I was craving for some pulao or biryani today but it had to be quick, chatpata and absolutely lip-smacking. The only recipe which fitted my imagination was this famous dish from the streets of Mumbai, the Tawa Pulao. Loaded with the goodness of assorted vegetables, tartness of tomatoes and spiciness of the pav bhaji masala, this street delicacy can be found being made on every Pav Bhaji stall in Mumbai on big large iron skillets and I guess, it is from there, where it gets it name from.
Undoubtedly, this rice specialty finds a special place in the heart of every Mumbaikar and perfectly makes for a delightful one-pot meal option that can be relished anytime of the day. Plus, this pulao always come to the rescue of bachelors and singles who are looking forward to try their hands at something which is not only simple and faster to cook but, tastes delicious too. So, here I am with my version of this awesome recipe...make it and satisfy your cravings as I did....and yes, its not necessary to use an iron skillet when preparing it at home....
Ingredients (serves 4)
Boiled basmati rice - 4 cups
Medium sized tomatoes (cut into small cubes) - 3
Onions (finely chopped) - 1
Green peas (frozen and refreshed, you can also use fresh but ensure to boil them first) - 1/2 cup
Green beans (finely chopped) - 1/4 cup
Carrots (grated) - 1/4 cup
Capsicum (finely chopped) - 1/8 cup
Boiled potatoes (small cubes) - 1/2 cup
Green chilies (finely chopped) - 2
Ginger/Garlic (chopped) - 2 tsp
Chopped coriander - a handful
Salt - as per taste
Turmeric powder - 1/2 tsp
Red chili powder - 2 tsp
Chaat masala - 1 to 2 tsp
Garam masala powder - 1/2 tsp
Pav bhaji masala - 1 tbsp
Lemon juice - 1/4 tbsp
Cumin seeds - 2 tsp
Vegetable oil - 2 tbsp
Method
1. Heat the oil in a wok or a pan and add in cumin seeds.
2. Next, add in the chopped ginger, garlic and saute until garlic turns golden.
3. Now add in onions and fry until they turn translucent.
4. Its now time add in chopped green chilies, green beans and cubed potatoes. Cook until potatoes turn a little golden.
5. Now add all the dry spices and cook for a while.
6. Next add in the grated carrots and again cook for 3 to 4 minutes.
7. Now add the cubed tomatoes along with 1/2 cup of water. Cover the wok with a lid and let the tomatoes release their tartness for about 5 minutes.
8. Turn off the flame, add chopped coriander, capsicum, green peas and lemon juice along with boiled rice. Fold in the rice with light hands and ensure they are combined well with the vegetables.
9. Serve hot with some papad and plain curd or raita on the side.
