No Bake White Chocolate Lemon & Rosemary Truffles

This easy-peasy no-bake recipe has been a super-duper hit at my home this summer season. I have already made them twice and this is the third time I am once again making them on special request from my husband. As he is quite fond of sweets and desserts and you would always find him in the kitchen looking for some sweet little munchies to have after his dinner, these yellow little balls make for an apt choice for him to just gobble down.

Talking about from where I got the idea of making these yummy truffles, its from homemadehooplah.com where the blogger had posted this amazing recipe of orange creamsicle truffles. The pictures lured me so much that I straightaway went in my kitchen to try them out. And since I did not have oranges, I decided to go with lemons with a gut feeling that they would turn out as delicious. And I am glad, I was not wrong in my thinking. If you love the lemony tartness and freshness as I do, I am sure you are also gonna love these sunshine balls. Do try them out and let me know how they turned out.

No Bake White Chocolate Lemon Rosemary Truffles


Ingredients

White chocolate (candy melts, chips or grated) - 1 1/2 cups
Fresh cream (I used Amul) - 1/4 cup
Butter (unsalted, cubed) - 1/4 cup
Icing sugar (you can also use simple powdered sugar) - 1/2 cup
Lemon juice - 1/2 tbsp
Lemon zest - 2 tsp
Chopped fresh rosemary leaves (optional) - 1/4 tbsp
Lemon yellow edible color (optional) - half a pinch

No Bake White Chocolate Lemon Rosemary Truffles

Method

1. In a double boiler, place the chocolate to start melting.
2. Once the chocolate has melted half way through, add in the cream and butter.
3. Let everything melt and combine well. Switch off the flame and let the chocolate mixture cool down for 2 minutes.
4. Its now time to add in the lemon juice, lemon zest, chopped rosemary leaves and color.
5. Mix everything nicely. Cover the bowl with a cling wrap and pop in the refrigerator for 4 to 5 hours until it sets and you are able to handle it to carve out balls from the same.
6. Once the chocolate has set, sprinkle the sugar on a plate and using a spoon or an icecream scoop, scoop out a little mixture at a time and roll out into a ball shape. Coat it in the sugar sprinkled on the plate. Continue doing the same with the remaining mixture.
7. Pop these balls again in the fridge to set. Take them out whenever you feel like munching them.
