Lemon & Herb Pan Seared Salmon with Fresh Greens and Cherry-Berry Salsa
Salmon has been one of the go-to fishes in our house and makes for a super easy choice, be it for a lazy weekend or for a quick late night dinner. While we were in India, we actually never got a chance to devour this beautifully moist pink fish, which is available widely here in Singapore in the non-veg section of all the super-markets.
I still remember, the first day I cooked it, I was a little skeptical of how it would turn out, but, frankly speaking, both me and my husband fell in love with it the very instant it got on our plates. Since that day 2 years back, till the day today, this fish is cooked at-least once every week at our home with different variants of marinades and sauces; the recipe I am sharing today is one of such experiments that turned out simply amazing. Pictures may not be so impressive (as I am not a professional photographer 😜), I can still guarantee you of the taste that was just mind-blowing. Do try it out once.
Ingredients (for fish)
Salmon - 1 fillet
Lemon juice - 1/2 tbsp
Crushed black pepper - 1 tsp
Salt - 1 tsp
Garlic powder - 1/2 tsp
Mixed Italian herbs - 1 tsp
Olive oil - 1/4 tbsp
Ingredients (for Cherry-Berry Salsa)
Chopped cherries - 1/4 cup
Blueberries - 1/4 cup (you are free to add other berries too)
Finely chopped onions - 1/4 cup
Finely chopped green chilies - 2 to 3
Lemon juice - 1/2 tbsp
Orange juice - 1 to 2 tsp
Olive oil - 1/2 tbsp
Salt - 1 tsp
Black pepper powder - 1/2 tsp
Roasted cumin powder - 1/2 tsp
Dried oregano - 1 tsp
Method (for salsa)
1. Mix all ingredients and refrigerate for 2 to 3 hours so that all flavors combine well.
Method (for fish)
1. Marinade the salmon with ingredients mentioned above for about an hour.
2. Heat oil in the pan. Make sure the pan is hot enough by placing your palm a few inches over it. When you feel air over the pan is extremely hot, you are ready to sear.
3. Place the salmon fillet "skin side down" on the pan and let cook on each side for 4 to 5 minutes depending on it's thickness. In the meantime, switch on your oven to preheat at 180 degrees C.
4. Once the fillet is seared on both sides to your desired color, pop it in the oven for 7 to 8 minutes to further cook through. (This is done because, during the searing process, though the outer part of the fillet is cooked, the inside still generally remains undone.)
5. After 7 to 8 minutes, dish out the salmon from the oven and serve hot with some rice, prepared salsa and fresh greens on the side.
