Paneer aur Aloo ke Kebab | Potato and Cottage Cheese Croquettes
One of the most easiest and delicious appetizers, Aloo aur Paneer ke Kebab, make for an awesome starter recipe, absolutely perfect for any and every kind of party; be it a small informal family gathering, a birthday celebration or a high tea reception. And yes! my husband just loves these kebabs...so even when there is no gathering at our home, I often make it for him, especially on the rainy days...not to explicitly mention, sitting in the balcony enjoying a lovely weather, they make for a lip-smacking treat with a cup of hot tea on the side. The best part is, since they don't require any fancy ingredients, they can be put together in just no time. Waiting for the recipe? Let's get started with the ingredient list below.
Ingredients
Boiled and mashed potato - 1 cup
Grated/mashed paneer (cottage cheese) - 1 cup
Bread crumbs - 1/2 cup + extra for coating
Chopped coriander - 1/4 cup
Chopped curry leaves - 6 to 8
Chopped green chilies - 1/2 tbsp
Finely chopped ginger - 1 tsp
Crushed peanuts - 1/2 tbsp
Salt - as per taste
Black pepper powder - 2 tsp
Roasted cumin powder - 1/2 tsp
Lemon juice - 1/2 tbsp
Sugar - 1/2 tsp
Cornflour - 1 tbsp
Oil - for frying
A little of Amchur or Chaat Masala can also be added as per your preference.
Method
1. Combine all ingredients except cornflour in a bowl and make a dough like mixture.
2. Mix cornflour with 1 to 2 tbsp of water to make a thin batter.
3. Spread bread crumbs in a plate and keep aside.
4. Now pinch out lemon sized balls from the potato dough and shape them into small kebabs or patties.
5. Dip each of the kebab in cornflour slurry and coat with the bread crumbs. Keep aside till all of them are done.
6. Pop the kebabs in refrigerator for 10 minutes.
7. In the meanwhile, place oil in a wok to heat on low-medium flame.
8. After 10 minutes, take out the kebabs from refrigerator and deep fry until they turn crispy and golden brown in color.
9. Serve hot with any chutney or dip of your choice.
