Famous Delhi Street Food - Ram Laddoo | Moong Dal Fritters

Ram Laddoo or the yellow moong dal fritters are one of the most popular street snacks of North India, especially famous in and around Delhi/NCR region. Crisp from outside and soft from inside, these savory laddoos are served with grated radish topped up with spoons-ful of spicy mint & coriander chutney..and yes!! piping hot straight from the kadahi in your plate, needless to say, they just make for an outstanding evening snack in the chilled Delhi weather. If you have also been thinking of savoring them from quite sometime but have not yet got an opportunity to visit a Ram Laddoo stall somewhere nearby your home, then I bring for you this easy-peasy recipe to make them in your very own home kitchens. Ingredients

For Ram Laddoo

Skinned split green gram (dhuli moong dal) - 1 cup (soaked in approx. 3 cups water overnight)
Green chilies (roughly chopped) - 2
Ginger - 1 inch
Salt - as per taste
Eno fruit salt - a pinch
Oil - for frying

For Assembly

Radish (grated) - 1 cup or as required
Coriander-Mint chutney - 1 tbsp
Dates-Tamarind chutney - 1/2 tbsp
Pomegranate arils (optional) - a handful
Chaat Masala - 1 tsp
Black Salt - 1 tsp
Roasted Cumin Powder - 1 tsp
Red chili powder (optional) - 1/2 tsp
Chopped coriander - a handful

Method

1. Drain all the water from the dal.
2. Grind the dal to a smooth batter along with green chilies and ginger. Do not use any water while grinding.
3. Whip the batter nicely using a spoon for about 10 minutes so that air is incorporated and laddoos come out soft and fluffy on frying.
4. In the meanwhile, keep oil to heat in a kadhai (wok).
5. Just before frying, add in salt and eno fruit salt to the batter and give a quick mix.
6. Now, using your hand or a spoon drop a little batter at a time in the medium hot oil. Fry the pakoras till they turn little golden from all sides. Do not overcrowd the kadhai.
7. Drain them out on a kitchen towel.
8. For assembly, place 5 to 6 pakoras in a plate. Sprinkle them with chaat masala, black salt, cumin powder and red chili powder. Next, top up with handful of grated radish, chopped coriander and pomegranate seeds. In the end, drizzle some green and tamarind chutney.
9. Serve hot along with some chai/tea.
