Arrabbiata is one of the most classic Italian sauces used in making pizza, pasta and pretty much anything "bread-y". The base of the sauce primarily comprises of fresh tomatoes with whole lots of garlic and basil. Arrabbiata in Italian means "angry" and hence, it is quite spicy with lots of red chili flakes added to give that kick. You can make this sauce well ahead of time and store in an air-tight jar in the fridge; and use as and when required - on the pizza, in the pasta or as is as a dip.

INGREDIENTS

  • Fresh red and plump yet firm tomatoes - 6 to 8
  • Tomato paste - 1/4 cup
  • Red chili flakes - 1 to 2 tsp, as spicy as you want
  • Finely chopped onions - 1/2 cup
  • Salt - as per taste
  • White pepper powder - 1/2 tsp
  • Finely chopped garlic - 2 to 3 tsp
  • Butter - 2 tbsp
  • Olive oil - 1 tbsp
  • Tomato ketchup - 2 tbsp
  • Fresh chopped Italian basil leaves - 1/2 cup

METHOD

  • Bring a large bowl of water to a boil.
  • Trim the stems from the tomatoes and cut a small "X" at the bottom of each tomato. Put them in boiling water and let them cook for 2 minutes until you see the skin coming off.
  • Immediately transfer all the tomatoes in ice cold water.
  • Now peel off the skin starting from the small cross that you made.
  • Chop half of the tomatoes into dices and puree the other half. Keep aside.
  • In a saucepan, heat the butter along with oil.
  • Add the red chili flakes and chopped garlic.
  • Stir on medium heat until the butter and oil starts sizzling and garlic starts attaining the golden color.
  • Next, add the chopped onions and saute until translucent.
  • Now add the chopped tomatoes along with puree and tomato paste. Chopped tomatoes will give a nice chunky texture to the sauce.
  • Let the sauce cook on medium until it thickens. Add the tomato ketchup and cook for few more seconds.
  • Season with salt, white pepper powder, dried Italian seasoning/herbs and fresh chopped basil leaves.
  • Let it come to room temperature and transfer to a clean glass jar for storage. It can be easily stored upto a week in the refrigerator.
