Cherry Ice Tea

Come summers and all I need is, some refreshing and cooling drinks that can not only keep me cool and hydrated throughout the day, but, also provide all the vital nutrients to the body. Therefore, I try and innovate various drink recipes that are preservative free and make use of fresh seasonal fruits. This Fresh Cherry Ice Tea is one amongst them and needless to say, is quite rejuvenating, healthy and absolutely tasty. Do try it out and I am sure you would love it.
The recipe is divided in two parts - first, making the cherry syrup and second, brewing the tea. In the end, all you need is assemble and serve chilled.

INGREDIENTS (yields 4 glasses)
- Washed and pitted cherries - 1 cup
- Sugar - 6 to 8 tbsp
- Lemon juice- 1 tbsp
- Water - 2 cups + 1 cup
- Tea leaves - 2 to 3 tsp
- Mint leaves - a few, for garnish
P.S - you may also use honey, agave for any sweet substitute instead of sugar.
METHOD
- In a saucepan, combine pitted cherries and sugar. Macerate with your hands.
- Add about a cup of water. Switch on the heat and let the cherries simmer until nicely soft and syrup thickens a bit.
- Switch off the heat and let the syrup cool down.
- Strain the syrup through a mesh pressing down the cherries so that you get all their pulp.
- Cherry syrup is ready. Mix in lemon juice. Refrigerate till use.
- Again in a saucepan, bring two cups of water to a boil.
- Switch off the heat and add in 2 to 3 tsp of tea leaves. Let the tea brew for 2 to 3 minutes.
- Strain and let the tea cool down completely.
- To make the ice tea, fill the serving glasses with crushed ice.
- Add 4 to 5 tbsp of cherry syrup topping it with tea.
- Serve chilled garnished with few mint leaves.
