Hey guys, sorry for my long absence from the blog.... was down with severe ankle pain for about 2 weeks but, didn't have the courage to see a specialist due to the ongoing pandemic situation. I was obviously suffering from a constant pain, however, what took a toll on me the most was the helplessness of not being able to work, try new recipes and most importantly not being able to shoot the food pics. After a long period of frustration, I pushed myself today and worked on this easy and classic herbed focaccia bread. Trust me, the bread came out really well, however, due to my aching ankle I couldn't do justice to the pics. Kindly excuse and try the recipe....hope you like it!! It had been quite a while since I had baked anything; my last baking adventure I remember was when I made these delicious, crunchy and crumbly Chocolate Marble Icebox Cookies  some 15-20 days back. So, the baking bug inside me was again ticking me to get up and provide some workout to my long resting hand and shoulder muscles (if you didn't know, baking is quite a good exercise and a relaxing therapy for your tired minds 😊). Yesterday only, I had bought a pack of fresh blueberries and rosemary from the supermarket with an idea of making a summer drink ..... but, as you know mind often plays fluky games 😉...so, I left the idea of the drink and got into the kitchen to bake this beautiful blueberry and rosemary focaccia bread and enjoyed it with my evening tea. Garlic Tomato & Rosemary Focaccia Bread

Nothing can beat the satisfaction which you get baking a bread with your own hands at home. And if that bread is focaccia, its even more better and   truly worthy to pat your own backs. If you are thinking what focaccia is? Well! its a wonderful savory Italian flat bread, oozing with flavors and aromas of lots of herbs and vegetables. It is often served as a side dish with soups, as a sandwich bread or even used as a base for pizzas. Though the most common topping used in this delicious bread is of simple fresh rosemary, I have also topped it with garlic, tomatoes, red chili peppers and freshly chopped coriander, just to infuse in more flavors. The recipe is quite simple, do try making it and let me know how it turned out.
