Part Whole Wheat Amritsari Aloo Kulcha [No Oven, No Yeast]

Aloo Kulcha is a popular bread recipe from the holy city of Amritsar in Punjab and hence, is prefixed with the word, "Amritsari". The flatbread stuffed with spicy filling of potatoes, is simply lip-smacking and is served with AMRITSARI CHOLLEY or DAL MAKHANI on the side. Traditionally, this leavened flatbread is made in earthen ovens (tandoor). However, since at homes tandoors are not available, I have cooked them on the stovetop. Also, instead of maida or the all-purpose flour, I have tried giving them a healthy twist by using whole wheat and all purpose flours in 1:1 ratio; plus there has been no use of yeast for leavening.  If you are looking for a special lunch on weekends, that too without going out to a restaurant, these Amritsari Kulchas make for a perfect choice. Delhi is burning these days with temperature rising over 40 degrees C. In such a scorching heat, it seems a horrendous job standing in kitchen for hours cooking elaborate meals. So, I am always in a lookout for simple meals that can be cooked in a jiffy yet are wholesome, delicious and nutritious in every possible way. With that being said, to make such recipes, I often make use of the leftovers which obviously helps me put together a nice dish in minimum possible time. One such easy and quick recipe that I made lately is this " Stir Fried Chickpea and Spinach Rice ". I already had some plain cooked rice and boiled chickpeas from last day's lunch lying in the refrigerator; all I did was tossed them up with some spices, chopped garlic and spinach and I was instantly ready with this yummilicious one pot meal. In India, especially on the Northern Side like Delhi and Punjab, whenever there is a party or a get-together planned at home, one dish that is a must-make for sure, has to be paneer (cottage cheese) based. While many a times I go either for Paneer Dhaniya Adraki Korma , Paneer Butter Masala , Shahi Palak Paneer Kofta Curry or Kadhai Paneer , this time I opted to experiment with flavors keeping them plain, simple and subtle. Trust me, the dish turned out to be super awesome and left my guests licking their fingers till the last bite.    To tell you more about this paneer recipe, its heart and soul is the gravy which is made using the paste of melon seeds, a little milk and a dollop of fresh cream. Petha !! well I know most of the people hate eating petha or kaddu. Especially if I talk about children, they always shy off such healthy green vegetables.
