Mango Custard | How to Make Mango Custard | Mango Custard Recipe

Its raining mangoes and all I can think of is making use of these delicious fruits in one or the other way. There are numerous dishes that I have tried with mangoes in the past; Fresh Mango Cake , Mango Kulfi , Mango Lassi , Gujarati Mango Kadhi , the ever popular Raw Mango Panna and Mango Sabudana Kheer are few of them. As its the holy month of Ramadan , I thought of trying yet another dish with these sunshine fruits that could be made well ahead of time and enjoyed during Iftari ; at the same time it had to be light and cooling to the palette considering how hot and scorching the weather is. So, here I have on my blog today, the extremely easy MANGO CUSTARD which is made with readymade vanilla custard powder and fresh mango puree. A little hint of saffron adds that much needed royal touch to this sinful dessert. Do try and I promise you will fall in love with it!! Butter Chicken | How to Make Butter Chicken

Image
Butter Chicken  finds its roots in Punjabi cuisine and is known to have first originated in the menu of the renowned restaurant chain in North India with the name of  Moti Mahal Deluxe . The rich, creamy and tomatoey gravy with a right balance of spiciness, tanginess and sweetness, makes for a perfect delight for every non-veg food lover. This delectable chicken delicacy has gained quite a popularity over the years and now finds one of the top places on the menus of many international multi-cuisine restaurants too. While authentically, the chicken pieces in Butter Chicken are first roasted in a tandoor and then added to the gravy, I bring to you an alternate method to make and relish this wonderful dish in your very own home kitchens, and that too without a tandoor. So, let's get started and see how it can be made. The recipe is divided in two parts - the chicken and the gravy. For the latter part, I have used my make-ahead makhani gravy base , recipe for which you c

Restaurant Style Paneer Pasanda | Stuffed Cottage Cheese in Creamy Tomato Sauce

Image
Paneer Pasanda is a rich and creamy delicacy from Mughlai Cuisine wherein stuffed fried cottage cheese cubes/triangles are dunked in a luscious tomato & cashew based gravy. This is a perfect recipe for parties, get-togethers and festive occasions. Well, paneer or cottage cheese is one ingredient that is so so versatile. There are literally an endless number of recipes that can be cooked with it; palak paneer , shahi paneer, paneer butter masala , paneer tikka, kadhai paneer, matar paneer, paneer kofta  and paneer bhurji are some of the common ones that are cooked most often at homes. Coming to Paneer Pasanda , making it is slightly complex and time consuming when compared to other paneer dishes. But, just in case you want to add a variety to your usual paneer accompaniments, it makes for a perfect dish to go on your menu. It is one recipe that was long-due on my to-do list and fortunately I got the opportunity to make it last Saturday for a small get-together at our place.

Dhaba Style Amritsari Chholey

Image
Being hardcore Punjabis, Chholey is something we have grown up eating. I remember, my mom would prepare them at least twice a month and just in case, there was a party or get-together planned, menu was absolutely incomplete without these delicious finger licking curried chickpeas that were either served with pooris or the Punjabi quintessential “bhaturas”.  Chholey is one delicacy that is made in different ways across the Indian households. Amongst all the varieties available, " Amritsari Chholey " are undoubtedly the best and obviously the most popular. A bit spicy and tangy oozing with lip smacking flavours, they make for an irresistible treat, especially on a comforting weekend afternoon. Pair them with a glass of buttermilk and you are certainly gone in the state of coma (well not literally 😂😂 ) for couple of hours...frankly speaking a good relaxing sleep is actually what I need after lunch on holidays to reenergise myself...so Chholey Bhaturey and Lassi is for su

Magaz Malai Paneer | Cottage Cheese in Creamy Melon Based Sauce

Image
In India, especially on the Northern Side like Delhi and Punjab, whenever there is a party or a get-together planned at home, one dish that is a must-make for sure, has to be paneer (cottage cheese) based. While many a times I go either for Paneer Dhaniya Adraki Korma , Paneer Butter Masala , Shahi Palak Paneer Kofta Curry or Kadhai Paneer , this time I opted to experiment with flavors keeping them plain, simple and subtle. Trust me, the dish turned out to be super awesome and left my guests licking their fingers till the last bite.    To tell you more about this paneer recipe, its heart and soul is the gravy which is made using the paste of melon seeds, a little milk and a dollop of fresh cream. What lends it a touch of spice is only a couple of green chilies and black pepper powder. And yes, it is totally incomplete without kasoori methi powder that provides it with that much needed earthiness. One of my best paneer recipes till date, it ought to be indulged with some garlic

Pannacotta , the very famous Italian dessert was on my mind for quite some while now; I wanted to make it for past couple of months but was not getting the right opportunity....and now since its the holiday season with a get-together planned at my place over the weekend, I thought it would be the right time to finally give it a try. So, I made this batch of vanilla pannacotta as a trial and paired it up with homemade peach sauce sauce infused with some rustic flavors and aroma of star anise. At first I was a little skeptical of whether peach sauce would be a good option to go with pannacotta but trust me, it came out simply awesome and yes!! now I am all set to please my guests with this luscious and creamy dessert. Sharing the recipe below; hopefully you will like it !!....Last but not the least, my apologies for posting not so great pictures as I was running late for a meeting and clicked them in a rush.......
