Crispy Nutella & Chocolate Chip Cookies

I love to have my coffee or tea with some home-baked cookies or biscuits; as soon as one lot is about to get finished, the next lot is up and ready to go in my cookie jar... for instance, its been only about a week that I baked the delicious Thumbprint Cookies filled with Chocolate Sauce, and now as only a couple of them are left, I am all set with these Nutella & Chocolate Chip Cookies. Loaded with a rich flavor and texture, these cookies are absolutely decadent and certainly make for an addictive stuff; I promise, you wont be able stop your hands at just one. Also, the recipe is quite simple with only a few basic ingredients needed along with some Nutella offcourse... one thing more, I like to have my cookies crisp so I have baked them for around 13 minutes. For those who prefer their cookies to have a chewy core, can go ahead and bake them for just around 8 to 9 minutes. As these are quite on a sweeter side, you can also sprinkle them with some sea salt before baking, just to cut down that extra sweetness. I did not have the sea salt handy so I skipped it altogether.


Nutella & Chocolate Chip Cookies

Ingredients (yields 15 to 18 cookies)

Unsalted butter (softened to room temperature) - 1/4 cup
Nutella - 1/4 cup + 1 tbsp
All Purpose Flour - 1/2 cup (packed)
Cornflour - 1 tbsp
Granulated Sugar - 1/4 cup + 1 tbsp
Salt - 1/2 tsp
Baking powder - 1/4 tsp
Egg yolk - 1
Vanilla extract - 1 tsp
Chocolate chips - 1/4 cup

P.S - As Nutella is considerably sweet, the amount of sugar can be adjusted/reduced as per one's own sweet preference. Alternatively, a little sprinkle of sea salt also helps cut down that extra sweetness.

Method

1. First cream the butter and sugar until pale and little airy. You can use a hand whisk or an electric handheld mixer for the same.
2. Next add in vanilla and egg yolk. Whisk until egg is incorporated.
3. Now add nutella and again whisk until that is also mixed in nicely.
4. In a separate bowl, mix in flour, baking powder and cornflour.
5. Using a spatula, mix in the dry ingredients with wet ingredients little at a time.
6. Next, fold in all the chocolate chips. You should be able to get a semi-stiff dough.
7. Now pinch out small equal sized balls from the dough. Flatten them a little between your palms and make a criss-cross sign on top with the help of a fork.
8. Place these cookies on a tray and refrigerate for about 30 minutes.
9.  15 mins before baking preheat your oven to 180 degrees C.
10. Place the chilled cookie dough discs on a parchment lined baking sheet and bake for about 12 to 14 minutes. Make sure to space the cookies at a gap of 1 inch as they would spread while baking.
11. Once the cookies are baked, cool them completely on a wire rack. These would harden as they cool.
12. Enjoy with some milk or coffee and store the rest in air-tight container.
