Come summers and all I need is, some refreshing and cooling drinks that can not only keep me cool and hydrated throughout the day, but, also provide all the vital nutrients to the body. Therefore, I try and innovate various drink recipes that are preservative free and make use of fresh seasonal fruits. This "LITCHI COCO LEMONADE" is one amongst them and needless to say, is quite rejuvenating, healthy and absolutely tasty. Do try it out and I am sure you would love it.

INGREDIENTS (yields two 400 ml glasses of drink)

  • Litchi/ Lychee (peeled and deseeded) - 15 to 20
  • Sugar - 4 tbsp
  • Lemon juice - 2 tbsp
  • Coconut water - 500 ml
  • Water - 500 ml
  • Fresh mint leaves - for garnish





METHOD

  • Bring water and sugar to a boil in a saucepan.
  • Add in the peeled and deseeded litchi. Simmer for 8 to 10 minutes or until water reduces a bit.
  • Switch off the heat and let the mixture cool.
  • Blend to a smooth puree.
  • Strain through a fine mesh, add in lemon juice and keep aside.
  • Take two tall serving glasses. Fill them with ice cubes.
  • Add litchi juice till the glasses are half filled.
  • Top with coconut water till the glass is fully filled.
  • Give a stir.
  • Garnish with mint leaves and immediately serve chilled.
Note: The litchi juice prepared by boiling litchis can be refrigerated for two days.
