Homemade Pizza & Pasta Sauce

Me and my husband are a great fan of Italian food; be it pizza or pasta, we have to have one of these two at least twice a month...and since the time I have perfected myself in making the pizza dough at home, this frequency has increased even more. Besides the dough, what elevates my pizza and pasta a notch higher in taste is my homemade sauce that I make with red ripe tomatoes, adding to it, just a hint of freshly plucked basil and dried oregano that makes it all the more aromatic and flavorful. Not to exaggerate, I simply have no words to describe how amazing my kitchen smells whenever I am baking pizza or cooking pasta using this beautiful sauce. Here's the recipe of the same, you can make it in a big batch and refrigerate or freeze as per your convenience. When refrigerating, it would last for about a week whereas when freezing, it can be used up to a month.   

Homemade Pizza & Pasta Sauce

Ingredients

Red ripe tomatoes (chopped, medium sized) - 4 to 5
Onion (medium sized, finely chopped) - 1
Garlic (finely chopped) - 4 to 5 cloves
Salt - as per taste
Black pepper powder - 1 tsp
Red chili flakes - 1/2 tsp
Dried oregano - 1 to 2 tsp
Sugar - 2 tsp
Vinegar - 1/2 tbsp
Sweet Basil leaves (chopped, optional) - 8 to 10
Olive oil - 1 tbsp

Homemade Pizza & Pasta Sauce

Method

1. Heat the oil in a pan.
2. Add in garlic and saute until it turns golden.
3. Next add the onions and cook until they soften.
4. Now add the chopped tomatoes and basil. Cook them covered on low heat until they get mushy and pulpy.
5. Next mix in the vinegar and let cook for another 5 mins. In the end, season with salt, black pepper, sugar, and dried oregano.
6. Turn off the flame. Let the mixture cool to room temperature.
7. Puree the cooled mixture in a blender. Transfer to the pan and again cook until it thickens to a saucy consistency.
8. Store in a sterilized container in refrigerator and use whenever making pizza or pasta.
