Well, summers is all about mangoes and their unmatched deliciousness; I am sure most of you would agree with me on this. As far as I am concerned, I am truly obsessed with these sunshine beauties and love relishing them in different forms, be it salads, shakes, ice-creams or even cakes. Oh by the way, did you happen to see my post for the "Mango Kulfi" that I shared yesterday? Luscious, creamy and bursting with that heavenly mangoish flavor and aroma, it simply made for a yummilicious treat for my family and needless to say, got finished in just no time.

After that sinful kulfi, today morning I was tempted to make this refreshing and one of the most popular Indian summer drinks, our very own "Punjabi Mango Lassi". Thick and creamy with a subtle aroma of cardamom, it is certainly a great cooler; have a glass in the breakfast and you are sure to be left completely energized for a long day at work.

Coming to the recipe, all you need is a few basic ingredients and just a couple of minutes to whip it all together; so, what goes in is, off-course the mangoes, some yogurt and milk, a drizzle of honey and a few pods of cardamom. Blitz them all together and you are all set to enjoy a delightfully scrumptious drink. I also like to add a few chopped pieces of mango to the lassi for that additional chunkiness but, that is completely optional.

Ingredients

  • Ripe mangoes (medium sized) - 2
  • Whisked plain yogurt - 1 cup
  • Milk - 1/2 cup
  • Honey - 2 to 3 tbsp (depending on sweetness of mangoes)
  • Cardamom powder (optional) - 1/4 tsp
  • Chia seeds (optional) - for garnishing
  • Mint leaves (a few, optional) - for garnishing

Method

1. Crack open the green husk of the cardamom pods, take out the seeds and crush in a mortar pestle. Keep aside.
2. Peel off the skin of the mangoes, cut the flesh in pieces discarding the stone. You may also use canned mango pulp if fresh mangoes are not available.
3. Blitz mango pieces in a blender along with yogurt, milk, honey, crushed cardamom and few ice cubes until smooth.
4. Pour in serving glasses and serve chilled. Garnish with few mint leaves and a sprinkle of chia seeds.

You can also lend lassi with some extra flavoring by adding few drops of rose water or some saffron strands.
