Come summers and I eagerly wait for two of the most incredibly delicious fruits of the season: cherries and litchis. So colorful, juicy and flavorful, they have been my favorites since childhood. Though I love to eat them as is, being a foodie and off-course a
food blogger, I also try to put them to use in different food preparations as well.
For those who have been following my blog would know how much I love to play with different ingredients especially when it comes to
drinks and beverages; for instance my recipe of "
Peach Pomegranate & Rose Agua Fresca" was the outcome of one such experiment. Not to exaggerate, it was truly loved by my family and friends; and believe me, it remained in great demand at our place for days.....
But as you would agree, after a while, it tends to get a little boring, tasting the same old flavors every now and then. So, finally it was time for me to again come up with some new and interesting recipe that would help beat this scorching summer heat. With batches of litchis and cherries lying in the refrigerator, I was all set to blend them to yet another beautiful concoction. A slight addition of lemon juice, some sugar syrup and a couple of glasses of chilled water resulted in this refreshing and exquisite "
Litchi and Cherry Lemonade". And here I am, with the detailed recipe of the same. Hope you like it !!

Ingredients
- Lychee (Litchi, peeled and pitted) - 1 cup
- Cherry (pitted) - 1/2 cup
- Lemon juice - 2 to 3 tbsp (as per your preference)
- Granulated sugar - 1/2 cup, adjust as per your sweet preference
- Water - 4 cups
- Mint leaves - a few, for garnish
- Cherries - a few, for garnish

Method
- Blend litchis to a smooth puree. Strain through fine mesh and keep the juice aside. You would get about 1/2 a cup of fresh litchi juice.
- Combine sugar, cherries and water in a saucepan. Cover and cook for 15 to 20 minutes on medium-low flame. Mash the cherries in between as they get softer. Turn the flame off and let the cherries seep in the syrup for 15 to 20 minutes or until the syrup comes to the room temperature.
- Strain the mixture through a fine mesh, pressing the cherries as much as you can to get maximum flavor. Add lemon juice, litchi juice and stir nicely.
- Store in a glass bottle and chill for 3 to 4 hours.
- Add few cubes of ice in serving glasses. Pour the lemonade over the ice and serve chilled garnished with few cherries and mint leaves.
