Farali Dhokla - Navratri Special [No Eno Fruit Salt] | Vrat ka Dhokla | Barnyard Millet Savory Steamed Cake

Recently my husband travelled to Ahmedabad and while returning brought a 3-in-1 dhokla/idli/patra steamer for me. Since then, I am always in lookout for opportunities to use this versatile steamer. Well! in the past 15 - 20 days I have already tried my hands making the instant KHAMAN DHOKLA and the 3 GRAIN DHOKLA, both of which were a big hit on my blog. It was now time again to experiment something new; and because we all are observing the Navratri fasts, there was no choice but to come up with a farali dhokla.

A few days back, I was just scrolling through various blogs to find a dhokla recipe for the vrat (fasting) but each one listed a recipe that called for use of either eno or baking soda. Since I did not want to incorporate any of these ingredients in my fasting recipe, I thought of  going the old-fashioned way i.e. fermenting the batter overnight so that it gets a natural rise while steaming. And to my utter surprise, it actually worked. I got a nice spongy and fluffy dhokla that we enjoyed with our favorite ROASTED GUAVA & MINT CHUTNEY. If you too are looking for a farali dhokla recipe that is sans off any fruit salt or leavening agent, this recipe is just for your sorts. Do try, I am sure you won't be disappointed.

A small pointer, I have used red chili powder for tempering. In case you don't take red chili in fast, kindly skip it or instead use the black pepper powder.

Ingredients

  • Samak Rice (Barnyard Millet) - 1 cup
  • Sabudana (sago pearls) - 2 tbsp
  • Salt (sendha namak) - 1 to 2 tsp (or as per taste)
  • Green chili paste - 1 tsp
  • Sugar (optional) - 1 tsp
  • Lemon juice - 1/2 tbsp
  • Sour curd - 1/2 cup
  • Water - 1/2 cup

For Tempering
  • Peanut oil - 2 tbsp
  • Cumin seeds - 1 tsp
  • Curry leaves - a few
  • Red chili powder (or black pepper powder) - 1/4 tsp

Method
  1. Grind samak rice and sabudana to a fine powder.
  2. In a bowl, combine the ground flour, salt, lemon juice, green chili paste, sugar, water and curd into a thick yet a pourable consistency batter.
  3. Cover and place it in a warm place to ferment overnight. In the morning you would see little bubbles on top of the batter.
  4. Fill a deep pot/vessel with about 2 inches of water. Place a trivet and cover it. Switch on the flame and let steam get generated inside the pot. You can also use a steamer for the same. Well, I used my dhokla steamer :)
  5. Grease a baking dish or a pan and pour the batter in it.
  6. Place it in the vessel, cover and let steam for 20 minutes.
  7. Insert a toothpick in the center. If it comes out clean, dhokla is cooked.
  8. Take it out and let it cool for 5-7 minutes. Loosen the dhokla by running a knife around the edges and invert onto a plate.
  9. For tempering, heat the oil. Add in cumin seeds. As they splutter, switch off the flame and add curry leaves along with red chili/black pepper powder.
  10. Immediately pour over the dhokla.
  11. Enjoy warm or cold whatever way you like.
