Well, the term,
Sheer Khurma comes from Persian language wherein 'Sheer' refers to 'Milk' and 'Khurma' refers to 'Dates', and hence
Sheer Khurma can be deciphered to 'Milk cooked with Dates'. According to legends, Sheer Khurma came to India with the Turk and Mughal rulers, and in the beginning, it was just the thickened milk with dates that was consumed first thing in the morning to celebrate the joyous
festival of Eid. However, with years passing, vermicelli and nuts became an integral part of this creamy and luscious dessert...
INGREDIENTS
- Full fat milk - 5 cups
- Fine nylon vermicelli - 50 grams
- Condensed milk (milkmaid)- 200 grams/ half tin
- Dates (deseeded, chopped) - 5 to 6
- Chopped nuts (almonds, cashews, pistachios) - 1/4 cup
- Chironjee - 1 tbsp
- Raisins -1 tbsp
- Saffron strands (optional) - 5 to 6
- Rose water (optional) - 1 tsp
- Ghee - 1 tbsp
- Cardamom powder - 1/2 tsp
- Dried rose petals (optional) - for garnishing

METHOD
- Bring the milk to a boil in a heavy bottomed pan. Once boiled, simmer to reduce it to half.
- While the milk is simmering, heat about 1/2 tbsp of ghee in a pan. Add the chopped nuts, chironjee and raisins. Saute until aromatic. Remove and keep aside.
- In the same pan, heat the remaining ghee. Add the vermicelli and roast on low heat until nice golden and aromatic. Keep an eye as vermicelli may burn quickly. Remove and keep aside.
- Once the milk is reduced to half, add the dates, saffron, cardamom powder and condensed milk. Simmer for another 10 to 12 minutes.
- Add the fried nuts and vermicelli. Give a nice stir and cook for another 2 minutes.
- Remove from heat and season with rose water.
- Serve warm or chilled, garnished with few chopped pistachios and dried rose petals.
