Indo - Chinese Style Vegetable Fried Rice | How to Make Vegetable Fried Rice


The Indo Chinese Fried Rice is something we all have grown eating in the Chinese restaurants all across India. Though far from the authentic Chinese, I guess, this is what we are addicted to. One of the most delicious and simple recipes, it comes together in no time and makes a wonderful use of the leftover rice. So, just the rice and some assorted vegetables to go in and you are ready for a wholesome meal, simple isn't it?. Here I would like to mention that though fried rice can be made with any variety of rice, jasmine rice gives it a nice authentic Chinese feel and aroma. But, just in case you cant lay your hands on them, any short grain rice works perfectly well for the recipe. Also, the veggies that you want to go in the rice depend on your preference and choice; I have added carrots, broccoli, beans and bellpeppers, you feel free to add any that you like. Only thing you need to take care of is, sauteing that vegetable first which takes longer to cook. For example, while cooking the vegetables, I have first added carrots, beans and broccoli because they take more time to cook as compared to bellpeppers and onions. This technique also ensures the vegetables retain their crunch. Had I sauteed bellpeppers and onions first followed by carrots and broccoli, by the time the latter two would have cooked, the earlier ones would have gone mushy. So, if you take care of this one tip, I am sure your rice would come out really nice and fluffed up with each grain separated.  

Indo - Chinese Style Vegetable Fried Rice

INGREDIENTS
  • Cooked and cooled rice, preferably short grain rice (preferably cooked a day before and refrigerated)- 1 cup
  • Finely chopped carrots - 1/4 cup
  • Finely chopped French beans - 1/4 cup
  • Finely chopped onions - 1/4 cup
  • Finely chopped red/yellow bellpeppers - 1/4 cup
  • Finely chopped green chilies - 1 tsp
  • Broccolli florets - 1/4 cup
  • Finely chopped garlic - 1 tsp
  • Finely chopped ginger - 1 tsp
  • Vegetable oil - 1 tbsp
  • Red Chili sauce - 1 tbsp
  • Soy sauce - 1 to 2 tsp
  • Vinegar - 1/4 tbsp
  • Salt - as per taste
  • White or Black pepper powder - 1 tsp
  • Spring onion greens - a handful, for garnish

METHOD
  • In a wok, heat up the oil.
  • Add the chopped ginger and garlic. Saute on high flame until they turn golden.
  • Next, add the chopped carrots along with beans and broccoli.
  • Saute for 2 to 3 minutes.
  • Next, add the onions and again saute for a minute  or two.
  • Add the bellpeppers along with green chilies. Again saute for few seconds on high heat only.
  • Toss in the cooked rice and mix in nicely. Saute for 2 to 3 minutes stirring in between.
  • Season with salt, black pepper, chili sauce, soy sauce and vinegar. Give a nice mix.
  • Transfer to a serving bowl and garnish with spring onion greens. Serve with an Indo Chinese style gravy such as manchurian, chili chicken, chili paneer or the utterly flavorful assorted vegetables in sweet & sour sauce. 

FEW TIPS FOR THE BEST FRIED RICE
  • Always use cold/refrigerated rice.
  • Do not overcrowd the wok as your rice won't saute well.
  • Always take a thin base iron wok for the best street style results.
  • The vegetables that take longer to cook, always saute them first. For example, I added the carrots, beans and brocolli first bcoz these veggies take longest to cook. Add the ones that take a shorter time to cook at the end such as bell peppers. This ensures, the vegetable retain their crunch.
