Well, Christmas is here and all I can think about is baking. To get that Christmasy feel, I have chosen the plump and ruby strawberries to go into a delicious fresh strawberry tea cake. The recipe is quite simple and comes together in no time. Considering the health factor, I have also replaced maida (all purpose flour) with the whole wheat flour. Hope you like the recipe !!

INGREDIENTS
- Whole wheat flour - 1 and 1/4 cup
- Caster/powdered sugar - 1 cup
- Butter - 1/2 cup
- Greek yogurt (or hung yogurt) - 1/2 cup
- Eggs - 2
- Salt - 1/2 tsp
- Baking powder - 1/2 tsp, I have used the double action baking powder
- Baking soda - 1/4 tsp
- Vanilla extract - 1 tsp
- Fresh strawberries, chopped - 1/2 cup
- Fresh strawberries, halved - 4 to 5, for the top garnishing

METHOD
- Start by preparing a 9 inch baking pan by smearing it with some butter and then drenching it some flour.
- Turn your oven to preheat at 180 degrees centigrade.
- Now melt the butter in a saucepan on low heat.
- Once it is melted, take it off the heat. Let it cool for a minute or two and then mix in the sugar.
- Next, add the yogurt and give a nice whisk.
- Incorporate eggs one by one followed by vanilla extract. Whisk the mixture until little light and fluffy.
- Sift the whole wheat flour twice along with salt, baking soda and baking powder.
- Now, start adding the dry mixture to white mixture in three batches using cut and fold method.
- Mix only until you dont see big patches of flour in the batter. Do not overmix.
- Now drench the chopped strawberries in a little bit of flour and incorporate them gently in the batter.
- Pour the thick batter in the baking pan.
- Top it with halved strawberries.
- Pop it in the oven to bake for about 40 minutes.
- Once the cake is out of the oven, let it sit for 5 minutes in the baking pan itself.
- Run a knife along the edges of the pan and invert the cake on a plate.
- Cool completely over a wire rack before cutting in slices. Drench with some icing sugar and serve warm or cold.
