Whole Wheat Fresh Strawberry Tea Cake | Strawberry Tea Cake Recipe

Well, Christmas is here and all I can think about is baking. To get that Christmasy feel, I have chosen the plump and ruby strawberries to go into a delicious fresh strawberry tea cake. The recipe is quite simple and comes together in no time. Considering the health factor, I have also replaced maida (all purpose flour) with the whole wheat flour. Hope you like the recipe !!

METHOD

  • Start by preparing a 9 inch baking pan by smearing it with some butter and then drenching it some flour.
  • Turn your oven to preheat at 180 degrees centigrade.
  • Now melt the butter in a saucepan on low heat.
  • Once it is melted, take it off the heat. Let it cool for a minute or two and then mix in the sugar.
  • Next, add the yogurt and give a nice whisk.
  • Incorporate eggs one by one followed by vanilla extract. Whisk the mixture until little light and fluffy.
  • Sift the whole wheat flour twice along with salt, baking soda and baking powder.
  • Now, start adding the dry mixture to white mixture in three batches using cut and fold method.
  • Mix only until you dont see big patches of flour in the batter. Do not overmix.
  • Now drench the chopped strawberries in a little bit of flour and incorporate them gently in the batter.
  • Pour the thick batter in the baking pan.
  • Top it with halved strawberries.
  • Pop it in the oven to bake for about 40 minutes.
  • Once the cake is out of the oven, let it sit for 5 minutes in the baking pan itself.
  • Run a knife along the edges of the pan and invert the cake on a plate.
  • Cool completely over a wire rack before cutting in slices. Drench with some icing sugar and serve warm or cold.
