Mango and Orange Agua Fresca with Pomegranate Syrup

Well, summers are at their peak, which gives me an apt reason to enjoy my favorite summer fruit, "MANGO" in a super refreshing and hydrating summer drink. To this "Mango Agua Fresca", I have also mixed in some orange juice to boost the immunity factor. Also, the fresh homemade pomegranate syrup adds a touch of oomph to this so very vibrant and delightful homemade mocktail. Another special thing about this drink is that it's my first ever entry to a photography contest being run by the popular and exclusive store for photography backdrops from Bangalore, the Varai Prop Store! So, wish me luck guys and enjoy this beautiful drink to cool yourselves down in this sweltering heat.


Mango and Orange Agua Fresca with Pomegranate Syrup


INGREDIENTS

For Pomegranate Syrup

  • Fresh pomegranate juice - 2 cups (I blended the pomegranate arils from about 5 pomegranates in a blender and then strained the mixture with a cup of water to get the fresh juice)
  • Sugar - 1/2 cup
  • Lemon juice - 1 tbsp
For Mango and Orange Agua Fresca
  • Fresh and ripe mango cubes - 4 cups
  • Orange juice - 1 cup
  • Water - 3 to 4 cups
  • Sugar - 1/2 to 3/4 cup, depending on the sweetness of mangoes

METHOD

For Pomegranate Syrup

  • In a saucepan, combine pomegranate juice and sugar.
  • Heat on medium flame and let the mixture come to a boil.
  • Simmer and let it cook for about 30 to 35 minutes or until you see the syrup thickening. All this while, keep an eye and keep stirring at regular intervals to avoid the syrup from burning. To check if its done to the right consistency, insert a spoon in the syrup. It should nicely coat the back of the spoon. The consistency should be thick yet flowy. 
  • Switch off the heat. Mix in lemon juice and let it come down to room temperature.
  • Once the syrup has cooled, transfer in a sterilized glass bottle and store in refrigerator.
  • If the syrup thickens on refrigerating, just insert the bottle in warm water for few seconds and the syrup would be ready to use in any kind of drinks or desserts.  


For Mango and Orange Agua Fresca

  • In a deep saucepan, combine mango cubes and sugar along with water. Cover and let it cook on medium heat until the mango pieces are completely mushy and softened.
  • Cool down to room temperature.
  • Pulse in a blender jar and strain to get the mango juice. If the juice seems thick, adjust the consistency by adding a little water.
  • To the mango juice, add about 1 cup of fresh or store bought orange juice.
  • Mango and Orange Agua Fresca is ready. Chill for 5 to 6 hours.
  • To serve, add about 2 to 3 tbsp of pomegranate syrup in the serving glass. Top it with the chilled agua fresca and serve garnished with some fresh mint leaves.


P.S. You can always enjoy this agua fresca on its own without adding the pomegranate syrup. Also, please feel free to adjust the amount of sugar in the agua fresca based on your sweet preference. You can even use honey, stevia or any preferred sweetener as a sugar substitute.
