One of the most famous and by far my personal favorite amongst the  street foods of India is the ultimate crispy and karaari Aloo ki Tikki . Absolutely crisp on the outside with often a spicy filling inside made with chana dal or moong dal and served along with spicy mint-coriander and sweetened tamarind-jaggery chutneys, the aloo tikki is definitely a foodie's delight.  It's been almost 2 years that I did not happen to eat this lovely snack recipe from the streets of Delhi as I was dealing with quite a number of health issues and also being covid so much around, was avoiding the street food. So soft, delectable and absolutely melt in mouth, Dahi ke Kebab are one of the most loved and popular vegetarian appetizers served in almost every North Indian restaurant. While, authentically these kebabs either have besan (gram flour) or bread crumbs for the binding, however, when craving for these kebabs during fasting, you can't have them because of them having these grains. So, just so that I could enjoy these heavenly goodies in fasting too, I tried creating a farali version of them by adding makhana (foxnut) and sabudana flours instead of besan or bread crumbs for the binding. Trust me, they came out absolutely mindblowing and super tasty. If you ever go to a North-Indian restaurant, you would most often find Dahi ke Kebab listed on top of the snacks & appetizers section. Crispy on the outside and super-soft and melt-in-mouth on the inside with a delicious creamy texture, no doubt, they are every food lover's delight.  Authentically, if you talk about kebabs, you would not find bread crumbs used in them originally. And this held true even for the Dahi ke Kebab because as far as I remember 4 to 5 years back, if we ordered for these kebabs at a restaurant we would get the super soft textured kebabs without a crisp outer shell.  However, with time, I guess chefs modernized and tweaked the recipe a bit to give it that crispiness on the outside, which I believe makes these kebabs even more delectable. Hara Bhara Kabab is by far one of the most popular appetizers available on the menu cards of almost every restaurant across North India. Translating to "GREEN" from the words "Hara Bhara", they are very delicious and healthy, and primarily have to their ingredients, some fresh blanched spinach leaves and green peas that are combined with some grated potatoes and an assortment of mild spices for a delectable taste. As specified, it is more of a restaurant preparation but, can be easily prepared at home too. South Indian Style Farali Dahi Vada | Vrat ka Dahi Vada

I have always been an ardent fan of South Indian Style Dahi Vada or Thayir Vadai . The first time I had this lipsmacking curd and vada preparation was at the famous restaurant chain Sagar Ratna and trust me, I was completely bowled over with the mild taste of the dish. The crispness of lentil vadas, the subtle sweetness of yogurt and that delicious and aromatic tempering of curry leaves and green chilies lent the humble delicacy a unique medley of flavors. Not to forget, the crunch of boondi sprinkled on top was just to die for. Although I love our very own North Indian Style Dahi Bhallas too, but this variation in South Indian Style was such a lovely delight that I became a fan of it in no time. Our summer vacations in childhood days ought to be spent at our Nana Ji's (maternal grandfather) place in Delhi. And often the vacations coincided with the arrival of monsoons, which necessarily meant a trip to the famous Roshan Di Hatti in Karol Bagh to relish the shop's crisp tikkis and gorge on their ever popular and melt-in-mouth kulfis. I still remember how we all cousins would barge into the shop and fill the place with our non-stop chit chats and endless fun & masti while hogging onto their chatpata stuff. Oh, what fun days were those!! ironically, things have changed these days with everyone getting so busy in their jobs and family lives; and those fun gatherings being taken over by just whatsapp group messages and forwards.  Coming back to the Aloo Tikki , well, you all must be thinking what made the ones served by Roshan Di Hatti so special?
