Garlic Tomato & Rosemary Focaccia Bread

Nothing can beat the satisfaction which you get baking a bread with your own hands at home. And if that bread is focaccia, its even more better and truly worthy to pat your own backs. If you are thinking what focaccia is? Well! its a wonderful savory Italian flat bread, oozing with flavors and aromas of lots of herbs and vegetables. It is often served as a side dish with soups, as a sandwich bread or even used as a base for pizzas. Though the most common topping used in this delicious bread is of simple fresh rosemary, I have also topped it with garlic, tomatoes, red chili peppers and freshly chopped coriander, just to infuse in more flavors. The recipe is quite simple, do try making it and let me know how it turned out.



Ingredients

3 cups plain flour/maida
1 cup luke warm milk
2 tsp salt
1 tsp sugar
7 gm/1 sachet of instant yeast
4 tbsp olive oil

For Topping

3 cloves of minced garlic
7-8 halved cherry tomatoes
1 finely chopped red chili pepper
2 tsp dried rosemary
1 tsp chili flakes
1 tbsp olive oil
Handful of fresh chopped coriander

Method

1. First add in sugar in the luke warm milk and dissolve completely. Now, add in the yeast and let the milk proof which will take around 7-8 minutes.
2. In a mixing bowl, sift the plain flour and add in salt. Mix well.
3. Now make a well in the flour and pour in the milk and olive oil. Combine them together and knead to a soft dough.
4. Cover the dough with a damp cloth and let it rest in a warm place for about 1 to 1 1/2 hours or till the time the dough doubles in size.
5. After the dough has substantially risen, take out and spread it on a greased oven tray. Now pinch it well with your finger tips to create small wells.
6. Heat a tbsp of olive oil and add in garlic, chili pepper and tomatoes. Saute well.
7. Pour this oil mixture over the pinched dough. Sprinkle some salt, chili flakes, dried rosemary and fresh coriander. Keep it in the oven at 200 degrees centigrade for at-least 25 minutes. Your focaccia bread should be ready. Enjoy it as is with a dip, as a sandwich or use it as a pizza base.
