Eggs Kejriwal Breakfast Cups !
No No No ! This dish has nothing to do with our honorable Delhi's CM Mr. Arvind Kejriwal..... This popular eggs breakfast recipe finds its origin in one of the premier Golf Clubs in Mumbai and has been named after their esteemed member Mr. Deviprasad Kejriwal (way back in 1960s). Here is an excerpt from India Today on the history of this beautiful delicacy:
Kejriwal, a conservative Marwari businessman, could not eat eggs at home. So he would gorge on this sumptuous breakfast at the club after a round of golf. He would ask the waiter to make it with a slice of cheese, fried egg and green chillies, Ajay Kejriwal, Devi Prasad's nephew was quoted saying by Times of India. "It got its name because other members would say , 'Get us what Kejriwal is eating'."
Eggs Kejriwal is today a popular delicacy globally and tops the food item list in New York. Though the authentic recipe calls for a simple bread slice topped with cheese and half fried egg, I have tried to give it a twist by presenting it in the form of cups. Hope you like my version of the same.
Ingredients (makes 1 cup)
Egg - 1
Bread slice - 1 (I used my leftover homemade focaccia bread, you can use any market bought bread too.)
Mushrooms (chopped) - 1 tsp
Onions (chopped) - 1 tsp
Green chilis (chopped) - 1 tsp
Grated cheese - 2 tsp or Cheese slice - 1/4
Salt - as per taste
Black pepper powder - as per taste
Oil - 2 tsp
Method
1. Bake the oven at 180 degrees centigrade.
2. Roll out the slice of bread thinly using a rolling pin.
3. Place the rolled bread slice in a baking cup mould (you can use a cup mould tray if making multiple cups)
4. Brush it with some oil and pop in the oven for 10 minutes or until it turns crisp.
5. Meanwhile, in a pan, saute onions, green chilis and mushrooms. Season them with some salt and black pepper powder. (You could use any vegetables of your choice)
6. Once the bread cups are crisp, take the mould out of the oven and fill with onion mixture. Top it with some cheese and again pop in the oven for about 2 minutes or until the cheese starts melting.
7. Again take it out from the oven; use a spoon to push down the cheese and onion mixture in the cup so that there is some space created to place the egg yolk. Crack open an egg and gently place the yolk in middle of the cup.
8. Again pop it in the oven for about 7-8 minutes or until yolk is partially cooked (It has to be slightly runny as in half fried egg).
9. Finally take out the cup, gently dish it out from the mould. Sprinkle with salt and pepper and serve hot !
