Atte aur Gond ke Ladoo are one of the quintessential winter treats at our home. Made with whole wheat flour, edible gum and loads of nuts, they are incredibly healthy and provide for the much needed warmth and immunity during the winter months. Needless to say, they are an inseparable part of our daily diet every season and make for an instant energy booster that we take with a cup of warm milk every morning. Ingredients

  • Whole Wheat Flour - 2 cups
  • Semolina (sooji/rawa) - 1/2 cup
  • Ghee (clarified butter) - 1 and 1/2 cups
  • Sugar - 1 and 1/2 cups
  • Gond (edible gum) - 4 to 5 tbsp
  • Chopped nuts (cashews, almonds, raisins) - 1/2 cup

P.S. - I have added only a few nuts in these ladoos, you can also add walnuts, foxnuts (makhane), chironji and pistachios.

Method

  1. Start by making boora shakkar or tagar.
  2. In a kadhai (wok), add sugar along with 3/4 cup of water.
  3. Let it turn into a thick sugar syrup on medium flame.
  4. Keep stirring the syrup until it crystallizes and turns into powdered sugar (boora/tagar). Dish out and keep aside.
  5. Again, in a wok, add ghee.
  6. Once it turns a little hot, add the gond (edible gum). It well swell. Let it turn golden and strain out. Pound it in a mortar-pestle into a coarse powder. Keep aside.
  7. Fry the chopped nuts to golden color in the ghee left in the kadhai. Dish out the fried nuts and keep aside. Let the extra ghee remain in the kadhai. 
  8. Add the atta and sooji to the hot ghee. Let the flour roast on low flame until it turns dark in color and starts releasing a nutty aroma. Keep stirring the mixture in between. Whole process will take 20 to 25 minutes.
  9. When you see ghee separating from the flour, turn off the gas and keep aside to cool it a bit.
  10. When the atta is warm enough to touch, mix in the boora, fried nuts and ground gond. Mix everything nicely.
  11. Take about a scoop of the atta mixture, press tightly between your hands and shape into balls.
  12. Let the ladoos cool down. Enjoy as is or with a cup of tea or milk.
