INGREDIENTS
- Mangoes, ripe yet firm, finely chopped - 1 cup
- Cucumbers, finely chopped - 1/2 cup
- Red onions, finely chopped - 1/4 cup
- Red bellpepper, finely chopped - 1/4 cup
- Tomatoes, seeded and finely chopped - 1/4 cup
- Garlic, finely chopped - 1 tsp
- Jalapenos or green chilies, finely chopped - 1 to 2 tsp
- Finely chopped fresh coriander - a handful
- Salt - to taste
- Black pepper powder - 1/4 tsp
- Lemon juice - 1 tbsp
- Olive oil - 1/2 tbsp

METHOD
- Combine all ingredients in a bowl.
- Mix nicely and refrigerate for half an hour so that flavours blend in well.
- Serve with chips, crackers or a salad/topping with tacos.
