Fresh Summer Salsa | Mango & Cucumber Salsa


INGREDIENTS

  • Mangoes, ripe yet firm, finely chopped - 1 cup
  • Cucumbers, finely chopped - 1/2 cup
  • Red onions, finely chopped - 1/4 cup
  • Red bellpepper, finely chopped - 1/4 cup
  • Tomatoes, seeded and finely chopped - 1/4 cup
  • Garlic, finely chopped - 1 tsp
  • Jalapenos or green chilies, finely chopped - 1 to 2 tsp
  • Finely chopped fresh coriander - a handful
  • Salt - to taste
  • Black pepper powder - 1/4 tsp
  • Lemon juice - 1 tbsp
  • Olive oil - 1/2 tbsp

METHOD

  • Combine all ingredients in a bowl.
  • Mix nicely and refrigerate for half an hour so that flavours blend in well.
  • Serve with chips, crackers or a salad/topping with tacos.
