Idli is one the most popular breakfast options across India. While traditionally, it is made with fermented rice and lentil batter, now-a-days many instant idli variations made with healthy grains are getting popular too. Some of them include the instant oats idli, rava idli and ragi idli. You can find the oats and rava idli on my blog and I make them quite often, however, this time I thought of making the idli with daliya or the broken wheat and to my utter happiness, it came out absolutely perfect and spongy. If you too are looking for instant and healthy breakfast options to try, then I must say, this is the recipe you must go for.

INGREDIENTS (makes 10 to 12 idlis)

  • Daliya/ Broken Wheat - 1 cup
  • Thick yogurt - 1/2 cup
  • Water - about 1 cup
  • Finely chopped green chilies - 1 tsp
  • Finely chopped coriander - 1/4 cup
  • Broken cashews - 8 to 10
  • Chana dal - 1 tsp
  • Mustard seeds - 1 tsp
  • Oil - 1 tbsp + grease idli moulds
  • Curry leaves - 8 to 10
  • Salt - to taste
  • Eno fruit salt - 1 sachet or 1tbsp

METHOD

  • Clean and wash the daliya a few times till the water runs clear off the dirt.
  • Spread the daliya on a kitchen towel and let it dry under a fan.
  • Once complete dry, roast the daliya in a pan on low flame just until it turns aromatic.
  • Cool it down and grind to a fine powder. You can double/ triple the quantity and store this powder in an air-tight jar to use later.
  • Take 1 cup of daliya flour and add to it, curd and water. Whisk nicely to get a smooth batter. Let it rest for half an hour.
  • In a pan, heat some oil. Once oil is hot, add in mustard seeds, broken cashews and chana dal.
  • Fry the cashews and chana dal on low heat till they attain a golden color.
  • Next, add the chopped green chilies and curry leaves along with chopped coriander leaves.
  • Fry these just for 30 to 40 seconds and switch off the heat.
  • Add this mixture to the daliya batter along with salt to taste. Mix everything nicely.
  • The consistency of the batter should be like the normal idli batter. Adjust the consistency by adding some water if it looks very thick.
  • Bring about 2 cups of water to boil in a steamer and grease the idli moulds with some oil.
  • When you see the steam generating from the steamer, add in the eno fruit salt to batter and whisk nicely.
  • Pour the batter in idli moulds and immediately pop in the steamer to cook for about 8 to 10 minutes.
  • Once done, let the idlis cool down completely before unmoulding.
  • Serve with any chutney of your choice.
