Kulcha is a soft leavened bread made either using soda bicarb or yeast as a leavening agent. This bread is highly popular in the Northern parts of India, especially Punjab, Himachal, Haryana and Uttar Pradesh, where it is often served with delicacies like Punjabi Chholey , Matra ki Chaat and Chicken Keema Masala among many others. Air Fried Atte aur Gud ki Mathri is the healthy and baked version of the otherwise deep fried whole wheat flour and jaggery mathris. A guilt-free tea-time snack , they are flavored with sesame seeds and also, some crushed fennel which makes them even more delicious, flavorful and aromatic. I made these beautiful mathris in air fryer, however, they can also be made in usual ovens or OTGs at 180 degrees Celsius.  With the lockdown going on, I am on a spree trying out different delicacies every other day, especially sweets and desserts such as Bengali Sponge Rasgulla , Eggless Chocolate Cake , Chawal ki Kheer etc. All this, because my husband is a major sweet-a-holic and he needs something sugary to snack on after his meals. Everyone is getting health conscious these days with most of the people trying to get away from the deep fried stuff; I guess that is the reason air fryer recipes are flooding the internet and are getting immensely popular among the foodies. Frankly speaking, initially I was little skeptical about the taste of air fried snacks so, was in a dilemma whether to purchase an air fryer or not. After thinking a lot, eventually I ordered one and these " potato corn balls " are the first thing that I made using the same. To my surprise, it exceeded my expectations with a perfect crisp texture from outside and a soft, melt-in-mouth texture on the inside. Moreover, a total guilt-free appetizer, me and my family fully enjoyed it to our heart's content. For me, this gadget turned out to be one of the best buys till date and I am surely gonna try it for making other guilt free recipes too like fritters, cutlets, samosas and kachoris; stay tuned and until then enjoy these healthy
