Potato Corn Balls [Air Fryer Recipe]
Everyone is getting health conscious these days with most of the people trying to get away from the deep fried stuff; I guess that is the reason air fryer recipes are flooding the internet and are getting immensely popular among the foodies.
Frankly speaking, initially I was little skeptical about the taste of air fried snacks so, was in a dilemma whether to purchase an air fryer or not. After thinking a lot, eventually I ordered one and these "potato corn balls" are the first thing that I made using the same. To my surprise, it exceeded my expectations with a perfect crisp texture from outside and a soft, melt-in-mouth texture on the inside. Moreover, a total guilt-free appetizer, me and my family fully enjoyed it to our heart's content. For me, this gadget turned out to be one of the best buys till date and I am surely gonna try it for making other guilt free recipes too like fritters, cutlets, samosas and kachoris; stay tuned and until then enjoy these healthy appetizers.

- Boiled, peeled and mashed potatoes (medium sized) - 3
- Corn kernels (boiled or frozen) - 1/4 cup + 1/2 cup coarsely crushed
- Finely chopped green chilies - 2 to 3
- Fresh chopped coriander leaves - a handful
- Fresh chopped mint leaves (optional) - 8 to 10
- Bread crumbs - 1/2 cup + for outer coating of the balls
- Lemon juice - 1/2 tbsp
- Salt - as per taste
- Black pepper powder - 1 tsp
- Red chili flakes - 1/2 tsp
- Garlic powder (or fresh finely chopped garlic) - 1/2 tsp
- Dried oregano - 1 to 2 tsp
- Cornflour - 2 tbsp
P.S - You can also add some grated processed cheese to the mixture.
Method
1.In a bowl, combine mashed potatoes, corn kernels, crushed corn kernels, half of the bread crumbs, salt, pepper, herbs mix, red chili flakes, garlic powder, chopped coriander, mint, green chilies and lemon juice. Mixture should come together to a dough consistency.
2. In a bowl, mix cornflour with 2 tbsp of water to make a thick slurry.
3. Divide dough into equal lime sized portions and shape them into balls. Dip each ball in the cornflour slurry and roll into bread crumbs to coat them nicely.

4. Refrigerate these balls for 30 minutes.
5. Place these balls in the air fryer basket, set the timer to 8 minutes and air fry them at 180 degrees C.
6. Once the timer goes off, increase the temperature to 200 degrees and again cook them for 3 to 4 minutes or until they turn golden and crisp all over.
7. When the timer goes off, take out the basket and carefully dish out the corn potato balls.
8. Serve them immediately with some tomato ketchup or mint-coriander dip on the side.
