Air Fried Atte aur Gud ki Mathri | Whole Wheat & Jaggery Crisps

Air Fried Atte aur Gud ki Mathri is the healthy and baked version of the otherwise deep fried whole wheat flour and jaggery mathris. A guilt-free tea-time snack, they are flavored with sesame seeds and also, some crushed fennel which makes them even more delicious, flavorful and aromatic. I made these beautiful mathris in air fryer, however, they can also be made in usual ovens or OTGs at 180 degrees Celsius. 

With the lockdown going on, I am on a spree trying out different delicacies every other day, especially sweets and desserts such as Bengali Sponge Rasgulla, Eggless Chocolate Cake, Chawal ki Kheer etc. All this, because my husband is a major sweet-a-holic and he needs something sugary to snack on after his meals. Having said that, having too many sweets full of refined sugar is quite unhealthy. Therefore, considering the health factor, today I baked these healthy yet very crunchy and delicious atta & gud mathris that he can munch on anytime, guilt-free!. I even replaced my usual cookies with these healthy bites and enjoyed our tea-time snacking on the same. Let me tell you, they are very easy to make and come out just under 30 minutes. Do give them a try! 


Air Fried Atte aur Gud ki Mathri | Whole Wheat & Jaggery Crisps



INGREDIENTS

  • Whole wheat flour - 1 cup
  • Sooji/semolina - 2 tbsp
  • Ghee - 1/4 cup
  • White sesame seeds - 2 tsp
  • Coarsely crushed fennel seeds - 2 tsp
  • Grated jaggery - 1/2 cup
  • Water - 1/4 cup
  • Baking powder - 1/4 tsp
  • Salt - 1/4 tsp

METHOD

  • Combine jaggery and water in a saucepan. Heat on low flame until jaggery is melted. Keep aside.
  • In a bowl, mix flour, sooji, salt, baking powder, sesame seeds and fennel seeds.
  • Add in ghee and mix in the dry ingredients using your hands.
  • Next, using melted jaggery little at a time, knead a semi-stiff dough. Cover and rest for 20 - 30 minutes.
  • Once the dough has rested, divide it into 3 portions. Roll out each portion in a sheet of 1/4 inch thickness.
  • Now cut small discs out of the rolled sheets using a cookie cutter. You can also cut them into strips or diamonds using a knife. Keep the unused dough covered all this while. 
  • Poke each mathri using a fork so that they don't puff up while baking.
  • Preheat the air-fryer/oven at 170 degrees C for 10 minutes.
  • Air fry/bake the mathris in batches until golden brown and crisp. Each batch will take 5 to 7 minutes to bake from one side. Flip over and fry/bake from the other side for 2 to 3 minutes.
  • Transfer to a plate and let them cool completely. As they cool, they will further crisp up. Once completely cooled, store in an air-tight container and enjoy as and when you like.
