Today evening my taste buds were craving for some Italian flavors but, I did not want to go a lengthy route spending hours kneading the dough, waiting for the yeast to ferment the same and then bake a pizza, garlic bread or a focaccia to enjoy with my tea. It was only few days back that I saw the recipe of these instant savory pizza muffins on a cookery show on TV. The recipe somehow got etched in the back of my mind; without wasting any time, I was ready with my baking stuff...and luckily I had everything in my pantry that I would have loved to have in my muffins: bellpeppers, corns, fresh coriander, Italian seasoning and off-course some Mozzarella Cheese. I am always on a look out for recipes that are easy and quick to put together. One of my favorite amongst such recipes is of classic Spaghetti Aglio-e-Olio . Simple boiled pasta drizzled with garlic infused olive oil, a dash of chili flakes and some Parmesan makes for a perfect week night dinner when I am too tired or lazy to make anything elaborate. While this simple and vintage recipe in itself is such flavorful and aromatic, yet at times it may feel a little boring to have it the classic way. That is the reason, to make it look little more vibrant, I sometimes add few veggies to it. This delicious stuffed braided pizza had been pending on my baking list for quite a while now; so, yesterday, when my husband proposed to go out for an Italian lunch, I had the much awaited opportunity knocking on my door to surprise him with this home-baked beauty. Oozing with aromas of an array of Italian herbs, palatableness of mozzarella and tongue-tickling flavors of corns, olives, tomatoes and onions drenched in dollops of pizza sauce, it came out really awesome and simply added to the list of my baking adventures. A popular item on most of the pizzeria menus, garlic knots need no special introduction. These delicious and puffy knots oozing with flavors of garlic (and other spices like dried oregano/rosemary) are truly a treat for any Italian food lover. I gave them a try in my very own home kitchen and to my joy, they came out really well and fluffy. The stuffing of cheese and dried cranberries further elevated their rustic aromas and left both, me and my husband licking our fingers till the last bite. Nothing can beat the satisfaction which you get baking a bread with your own hands at home. And if that bread is focaccia, its even more better and   truly worthy to pat your own backs. If you are thinking what focaccia is? Well! its a wonderful savory Italian flat bread, oozing with flavors and aromas of lots of herbs and vegetables. It is often served as a side dish with soups, as a sandwich bread or even used as a base for pizzas. Though the most common topping used in this delicious bread is of simple fresh rosemary, I have also topped it with garlic, tomatoes, red chili peppers and freshly chopped coriander, just to infuse in more flavors.
