Summers are here and for us, that means the kulfi season is full on. So, presenting to you my first kulfi of the season, the most easiest, simplest and creamiest Mawa Malai Matka Kulfi that needs just a handful of basic pantry ingredients! If you don't have the matkis, don't worry...just freeze them in any kulfi mould or a container that you may have and you are good to go....let's begin with the ingredients and then the recipe. Summers are here and what we crave for most is for some creamy, chilled and mildly sweetened desserts that are super delicious yet very light on the palette. If you too are on the same boat as us then this shreekhand or shrikhand  recipe flavored with a hint of rose water and elaichi (cardamom) is surely gonna be a keeper for you guys. Do try it out! Rose Elaichi Shrikhand INGREDIENTS Curd/ Yogurt - 1 kg Powdered sugar - approx. 3/4 cup Edible Rose water - 1 tbsp Fresh cream - 2 to 3 tbsp Milk - 2 tbsp or as needed Elaichi (cardamom) powder - 1/2 tsp Rose Elaichi Shrikhand Rose Elaichi Shrikhand METHOD Take a bowl and place a nice big strainer over it. Overnight Oats ! Well, if you are hearing this term for the first time, let me start by giving you a quick introduction about the same. Overnight Oats is nothing but an easy, no-cook version of the oatmeal that is more like a dessert, so much tastier, creamier and denser than the regular stove-top cooked hot oats. Served chilled straight from the refrigerator, it makes for a wholesome meal to relish during summers. Not to mention, its quite a versatile dish in terms of flavorings; one can flavor it with fresh fruits of their choice, chocolate, Nutella, or just plain simple nuts and seeds. Mango Peach Lemonade is something that was on my mind for quite a while but due to some family commitments, was not able to make the same. Although this beautiful drink tastes delicious as is, plain and simple, a slight addition of different flavorings gives it a glorious touch, making it all the more inviting. Last year, I frequently made the Mango Lassi , and this time I thought of lending this smoothie with some royal flavors of rose and almonds. I remember how much I loved the chocolate sandwich biscuits in my childhood. Filled with a luscious, lickable chocolate cream sandwiched between layers of crisp and crunchy cookies, they were my best accompaniment to a glass of milk every morning. Even today, these biscuits happen to be my weakness; though we can easily get a variety of them from store, the satisfaction of baking these lovely beauties at home is simply inexplicable. Plus the heavenly chocolaty aroma that fills through the kitchen is something that instantly transports you to another world. No wonder, I am always in a lookout for reasons and occasions to bake them..
