Classic Overnight Oats with Mangoes
Overnight Oats! Well, if you are hearing this term for the first time, let me start by giving you a quick introduction about the same. Overnight Oats is nothing but an easy, no-cook version of the oatmeal that is more like a dessert, so much tastier, creamier and denser than the regular stove-top cooked hot oats. Served chilled straight from the refrigerator, it makes for a wholesome meal to relish during summers. Not to mention, its quite a versatile dish in terms of flavorings; one can flavor it with fresh fruits of their choice, chocolate, Nutella, or just plain simple nuts and seeds. My version of this overnight oats comprises of a simple base topped with a couple of tablespoons of fresh mango puree, some chopped peaches and cherries and a sprinkle of sliced almonds and pistachios. You can go for the same base recipe and top it with any fruits that are in season; let me tell you creativity is the key here. So, make your brains do some exercise to come out with some interesting innovations to this healthy wholesome recipe.

Ingredients
- Rolled oats - 1/4 cup
- Greek yogurt - 1/2 cup
- Milk - 1/2 cup
- Vanilla extract - 1/2 tsp
- Honey - 1 to 2 tbsp (adjust according to your sweet preference)
- Fresh mango puree - 2 to 3 tbsp
- Fresh chopped fruits - 3 to 4 tbsp (I used peaches, mangoes and cherries)
- Finely sliced nuts (optional) - almonds and pistachios
Note: If you do not have Greek yogurt, simply tie the curd in a cloth and hang it for about 15 - 20 minutes so that excess water is drained out and you have a thick curd.
You can make this recipe VEGAN by using plant-based milk, plant- based yogurt and maple syrup for the sweetness. Looking for a sugar-free version? Add some mashed ripe banana and you are good to go...

Method
- In a bowl or a jar, nicely combine the yogurt, milk, oats, vanilla extract and honey.
- Cover and refrigerate overnight.
- Serve it chilled topped with fresh mango puree and chopped fruits and nuts of your choice.
