Classic & Easy Pumpkin Soup !

A hearty and delicious pumpkin soup is loaded with high nutritional value and lots of health. Here, I am sharing with you the most easiest way to prepare this appetizing recipe...hope you like it. Just for your knowledge, I have used milk in it, in case you are a vegan, you can go with the coconut milk and trust me, it will turn out as delicious. Ingredients 1 medium sized ripe pumpkin/butternut squash 1 medium sized red onion 3-4 cloves garlic 1 cup milk Salt as per taste 2 tsp black pepper powder 1 tsp chopped and fried garlic 1 tsp oregano 2 tsp cream (for garnishing) Method 1. Preheat the oven at 180 degrees for 10 minutes. 2. Slice the pumpkin into two halves and grease the sunny sides with olive oil. 3. Roughly chop onion and garlic and grease them too with some olive oil. 4. Bake pumpkin, onions and garlic in the oven for an hour or until all ingredients get little charred. 5. Loaded with nutrition of a variety of vegetables and delicious sweet corns, the piping hot " Sweet Corn Soup " makes for the most comforting food, especially on a chilly winter evening. Try it in your home kitchens this coming weekend and serve it hot with some crunchy appetizers or some noodles... Ingredients 1/2 cup finely chopped carrots 1/2 cup finely chopped french beans 1/2 cup sweet corn kernels 1/2 cup finely chopped cabbage 2 tsp finely chopped ginger 3 cups vegetable broth 1 tbsp cornflour 1 tsp sugar Salt to taste 2 tsp black pepper powder Some spring onion greens to garnish Method 1. Boil all the vegetables except cabbage in vegetable broth for about 15 minutes. 2. Add in the cabbage and let the soup boil further for 5 more minutes. 3. Add in salt, sugar and black pepper powder - mix well. 4. Make the cornflour slurry and add in the soup to thicken. 5. Let it boil for 5 more minutes and remove it in a serving bowl. Serve piping hot

The recipe is very simple and without eggs which makes it perfect for vegetarians too... do give it a try and post in your feedback after making the same. Ingredients 1 cup chocolate 1/2 cup fresh whipping cream 2 tsp sugar Method 1. Whip the cream until it forms peaks and keep it aside in refrigerator. 2. Melt the chocolate on double boiler and add in the sugar. Let it cool for around 10 minutes so that it cools down. 3. Mix the chocolate gently with cream and pour in serving glasses. Again place in the refrigerator for around an hour and serve chilled.

Falahari Veg Seekh Kebabs

Made from ingredients like raw banana, sweet potato and arbi, these falahari kebabs make for perfect treat for Navratri fasts. Do try making them at your homes and let me know how they turned out. Ingredients (Makes 12 - 15 Kebabs) 1 peeled and steamed sweet potato 1 peeled and steamed raw banana 4-5 boiled, peeled and fried arbi 1/2 cup grated radish 1/2 cup grated carrot 2 green chillies 1 small bunch fresh coriander Juice of 1 lime Sendha Namak (as per your taste) 2 tsp crushed peanuts 1 tbsp kuttu atta (buckwheat flour) 1 tsp dry mango powder 1 tsp roasted cumin powder 2 tsp pomegranate seeds Method 1. Grind the above ingredients and make a smooth dough out of them. 2. Skewer them on satay sticks and shape like kebabs using greasy hands. 3. Shallow fry in medium hot oil until they turn golden brown. Serve hot with mint and anaardana chutney.
