Chocolate Marble Icebox Cookies
Icebox cookies, also known as refrigerator cookies get their name from the fact that they are baked from a dough which is first refrigerated for hours to firm up and then sliced up into cookies just before being popped in the oven for baking. One of the most easiest cookie recipes on earth, one can come up with a variety of flavors and textures depending on his/her imagination. Today, I am here with the most basic of these recipes, the chocolate & vanilla marble cookies. Let's get started with the ingredient list.
Ingredients (yields 4 dozen)
All purpose flour - 4 cups
Unsalted butter - 1 cup
Confectioner's sugar - 1 + 1/2 cups
Eggs - 2
Cocoa powder - 1/2 cup
Vanilla essence - 2 tsp
Method
1. First cream butter and sugar together until the mixture becomes light & creamy.
2. Add in the vanilla essence and eggs one by one, whisking for about 2 minutes after each addition.
3. Next, sift the all purpose flour and add to the mixture to knead into a dough.
4. Divide this dough into 2 equal parts. In one of the parts, add cocoa powder and again knead until it becomes homogeneous.
5. Now, make equal sized balls from both the doughs.
6. Place one ball over the other in alternating colors. Knead them together to get a marble like texture.
7. Shape them into logs of around 2 to 2.5 inch diameter. Cover with cling wrap and place in the refrigerator to chill for at-least one hour.
8. In the meanwhile, pre-heat the oven to 180 degrees Celsius.
9. Once these logs are chilled enough, take them out and cut into slices of around 1/2 centimeter thickness.
10. Place them on the parchment lined baking tray and pop in the oven for 10 to 12 minutes. Take them out and place on a wire rack to cool completely. Enjoy with milk, coffee or tea.
