Chocolate Marble Cake [Eggless]
A perfect teatime treat, "Chocolate Marble Cake" has been one of my ultimate favorites since the childhood days. The beautiful marbled swirls that appear on cutting a slice of this cake are simply magical and have always fascinated me with their random artistic designs. I tell you, this classic beauty is worth a try at home and the eggfree version of the same absolutely makes it perfect for all the vegetarians out there !! Ingredients
Unsalted butter (softened, at room temperature) - 1/2 cup
Whisked curd/yogurt (at room temperature) - 1 cup
Milk (lukewarm) - 1/2 cup
Granulated sugar - 1 cup + 1 tbsp
All purpose flour - 1 + 1/2 cups
Cocoa powder - 2 tbsp
Baking powder - 2 tsp
Salt - 1/2 tsp
Vanilla extract - 1 tsp
Method
1. Sift the flour, baking powder and salt; keep aside.
2. Next, whisk butter and sugar together until creamy and light in texture.
3. Add yogurt and vanilla extract to the batter. Whisk nicely.
4. Now fold in the dry ingredients to the wet mixture in three batches. Use a spatula to do the same.
5. In the end, add the lukewarm milk and mix gently until you get a homogeneous batter of little thick consistency.
6. Divide the batter in 1: 2 ratio. Sift the cocoa powder and fold the same in lesser portion of the batter. You can also add around a tbsp of milk to mix in the cocoa powder nicely.
7. Grease and flour an 8" round baking pan or a 9" x 5" loaf pan and preheat the oven at 180 degrees C.
8. Next, pour the white batter in the baking pan. Now spoon dollops of the brown batter on the white batter spacing around half an inch apart.
9. Using a skewer or a fork, swirl the batter to create a marble effect.
10. Tap the pan on the counter and pop it in the oven to bake for about 50 minutes or until the skewer inserted in the center comes out clean.
11. Let it cool in the pan for 10 minutes after which unmould and let it completely cool on a wire rack.
12. Slice and serve along with a hot cup of coffee. The cake will stay fresh for 2 days at room temperature; for a longer shelf life, store in refrigerator.
