Aamrakhand - Mango Shrikhand Recipe

Luscious, creamy and so delightful, Aamrakhand is one of the most classic and easiest Indian dessert recipes that finds its origin in the state of Gujarat & Maharashtra. The beautiful dessert has to it, a thick yogurt (that we also know as hung curd or chakka in Hindi) base which is flavored with some sweet and fresh mango pulp, mostly of the Alphonso or Hapoos mangoes. However, if you can't lay your hands on the said variety, any Indian mango variety would work just as fine. For that matter, if you get the canned mango puree, you can even go ahead and use that too. INGREDIENTS



  • Yogurt (I used the home-set curd) - 3 cups OR Greek Yogurt - 1 cup
  • Powdered sugar - 6 to 8 tbsp
  • Mango puree, preferably of Alphonso or Kesar Mango - 1/2 cup
  • Cardamom powder (optional) - a pinch
  • Kesar/saffron strands (mixed in a tbsp of warm milk, optional) - 5 to 6

METHOD

  • Start by spreading a cheese cloth or a muslin cloth on a big bowl.
  • Pour the curd on the cloth. Now tie all ends of the cloth and hang it on the kitchen tap for 3 to 4 hours.
  • After the said time, untie the cloth and what you'll get is a thick curd also called as "chakka" in Hindi.
Note: You don't need to do the above steps if using Greek Yogurt.
  • Transfer the thick curd/greek yogurt in a bowl.
  • Whisk it nicely then mix in the powdered sugar, cardamom powder and saffron milk until evenly combined.
  • Now add the mango puree and mix in the yogurt using a hand whisk or a hand blender until smooth.
  • Store in refrigerator for 3 to 4 hours to chill.
  • Serve the Aamrakhand chilled topped with from fresh mango puree/mango bits and nuts of your choice.

Few Questions Answered

Q1. How do I make Aamrakhand if mangoes are not in season or I don't have access to fresh mangoes?
- If fresh mangoes can't be accessed, go ahead and use the canned mango puree. But, do check for the sweetness because canned mango pulp is often extra sweet. In that case, you can adjust the quantity of powdered sugar in the recipe accordingly.

Q2. How to make Aamrakhand using Greek Yogurt?
- If using Greek Yogurt, you need not tie in a cloth because Greek Yogurt is already thick. Just whisk it nicely and proceed with the normal recipe.

Q3. Which mangoes are best to make Aamrakhand?
- Most of the time, Aamrakhand is made using ripe and pulpy Alphonso or Kesar mangoes. However, if you can't lay your hands on these varieties, go ahead and use any Indian Mango Variety. Make sure they are absolutely ripe and juicy.
