Cheesy Spinach & Corn Spring Rolls using Homemade Spring Roll Sheets

Remember the other day, I posted a share on making Homemade Spring Roll Sheets/Wrappers? Well, here are these beautiful and super delicious "Cheesy Spinach and Corn Spring Rolls" that I prepared using the same sheets. So crisp on the outside and soft and cheesy on the inside, they came out just so perfect and melt-in-mouth vanishing from the table in no time...let's see how I prepared them..







INGREDIENTS






  • Spring Roll Sheets/Wrappers (I used homemade, however, you can even use store bought ones) - 6 to 8
  • Spinach (cleaned, washed and chopped) - 2 cups
  • Frozen or boiled sweet corn (coarsely crushed) - 1/2 cup
  • Finely chopped garlic - 6 to 8 cloves
  • Finely chopped onion - 1, medium size
  • Finely chopped green chilies - 1 to 2
  • Salt - to taste
  • Black pepper powder - 1 tsp
  • Mixed Italian herbs (optional) - 1/2 tsp
  • Oil - 1/2 tbsp
  • Grated mozzarella cheese - 1/2 cup



METHOD

  1. In a pan, heat 1/2 tbsp of oil.
  2. Once its moderately hot, add chopped garlic. Fry until slight golden.
  3. Add in chopped onions and saute until just translucent.
  4. Next add in crushed corns and saute for couple of minutes.
  5. Add salt, pepper powder, mixed Italian herbs. Give a nice stir.
  6. Throw in chopped spinach and cook on medium flame until it is all wilted and water is completely evaporated.
  7. Transfer to a bowl and let it cool down to room temperature.
  8. Once cooled, mix in chopped green chilies, freshly chopped coriander and grated cheese.
  9. Mix nicely.
  10. Place a spring roll sheet on the kitchen counter. Keep the rest covered under a wet cloth/kitchen towel.
  11. Spread about 2 tbsp of filling on the edge of the sheet.
  12. Roll it tightly and seal the edges using a little flour slurry (2 tbsp of maida mixed with 2 to 3 tbsp of water into a thick paste).
  13. Fry on medium hot oil until nice crisp and golden. Transfer on an absorbent paper and serve immediately with any dip or sauce of your choice.
P.S - These spinach and corn spring rolls can also be pan fried, air fried and oven baked at 180 degrees C for 10 to 15 minutes or until crisp.
