Cake Rusks or the Indian Style Biscotti is such a delicious and flavorful treat to go with your tea or coffee. Made by twice baking a simple vanilla sponge cake to a crisp perfection, these rusks simply make for a wonderful delight. If you have ever been intimidated by the thought of baking them at home, let me tell you, they are very easy to prepare and come out just perfect and delicious just like the bakery ones.... do try out the recipe below and I assure, you would never again go for the store bought ones..

INGREDIENTS

  • Maida/APF - 1 cup
  • Softened butter - 1/2 cup
  • Powdered sugar - 1/2 cup
  • Vanilla essence - 2 tsp
  • Eggs, at room temperature - 3
  • Baking powder - 1 tsp

METHOD

  • Using a hand mixer or an electric whisk, cream the butter and sugar together until light and pale in color.
  • Now, add in 1 egg at a time and whisk nicely.
  • Add in vanilla extract.
  • Sift flour with baking powder.
  • Fold this flour in the batter in three batches. Do not over mix.
  • Line a 7" * 7" square baking pan with some parchment or butter paper. Or, grease and dust with flour.
  • Pour the batter in the pan and pop in the 180 degree preheated oven to bake for 25-30 minutes at 180 degrees C.
  • Once baked, get out of the oven. Cool in the pan for 10 to 15 minutes then take out from the pan and cool the cake completely on a cooling rack.
  • Once cooled, cut the cake in 1 cm thick, 4 to 5 inch long pieces.
  • Place them on the baking tray and again bake at 150 degrees C for 15 minutes. Keep an eye so that the rusks do not burn.
  • After 15 minutes, flip the rusks and again bake at 150 degrees for another 10 minutes or until nice crisp and golden.
  • Take them out and let them completely cool.
  • Store in air-tight container.
  • Enjoy with tea or coffee.
