Cocoa Fudge Brownies [Egg-Free Recipe]
If you had been searching for the easiest brownie recipe all this while, then I must say you have stumbled upon at the right page. Loaded with the decadence of chocolate and a "just-to-die-for" gooey texture, these brownies are absolutely sinful and delish. The best thing about these brownies is, they are egg-free and make for a perfect treat for vegetarians; even vegans can try out the same recipe just by replacing milk and cream cheese with vegan substitutes such as almond/soya milk and yogurt. Ingredients
All purpose flour - 1 cup
Unsweetened cocoa powder - 2 tbsp
Baking powder - 1/2 tsp
Baking soda - a pinch
Salt - 1/2 tsp
Unflavored cooking oil - 1/4 cup
Cream cheese (or thick curd) - 1/8 cup
Milk (at room temp.) - 1/4 cup
Coffee powder - 2 tsp (dissolved in 1/4 cup boiling water)
Brown sugar - 1 cup
Vanilla extract - 1 tsp
P.S. - Normally baking soda and baking powder is not added in a brownie batter but, since these brownies are eggless, a slight hint of these leavening agents is important to help them attain a lighter texture, else they might come out extra fudgy and chewy, which is not something we are looking for.

Method
1. In a bowl, nicely whisk oil and brown sugar.
2. Next, mix in vanilla extract, cream cheese, milk and hot coffee. Whisk them well too.
3. Now, add sifted cocoa powder, flour, baking powder, baking soda and salt in three batches. Mix it well and pour the batter in a parchment lined square baking tin. To make it extra rich, you can also fold in a cup of choco chips or chopped nuts.
4. Pop the baking tin in a 350 degree centigrade preheated oven for about 30 to 35 minutes. It's always better to start checking it after 25 minutes, insert a toothpick in the center, if it comes out clean with just a little crumbs stuck to it, its time to take the brownie out of the oven.
5. Let it cool completely before slicing into squares. I couldn't resist myself cutting it down once its completely cooled, therefore, you can see crumbs scattered all over :)
6. Enjoy it warm with a dollop of vanilla ice-cream on top.
