Well, summers is all about mangoes and their unmatched deliciousness; I am sure most of you would agree with me on this. As far as I am concerned, I am truly obsessed with these sunshine beauties and love relishing them in different forms, be it salads, shakes, ice-creams or even cakes. Come summers and fruit markets are lined up with vendors selling a variety of mangoes. Emanating a strong aroma, just enough to captivate your senses, you certainly get tempted to buy some and arrive home with a bag full of them. Well! that is what exactly happened with my husband last week. He is so fond of mangoes that he could not resist himself and bought a huge basket of these sunshine fruits while returning from office. Besides relishing them as is, I invested some of them in this delicious, creamy and luscious " mango kulfi ". Appe , also known a Appam or Paniyaram,  is one of the traditional breakfasts served in almost every South Indian household. Authentically they are made using fermented rice flour batter (same way as in idli and dosa), but, since its a tedious and time taking process soaking, grinding and fermenting the rice, these instant oats & rava appe make for a quick and easy alternative. Also, loaded with whole lots of veggies, they certainly provide for a nutritious, healthy and yummilicious option, perfect to pack for your kids' lunch box too. Ideally they go very well with South Indian coconut chutney , in case that is not readily available, they can be served with coriander-mint chutney or tomato ketchup as well. Everyone is getting health conscious these days with most of the people trying to get away from the deep fried stuff; I guess that is the reason air fryer recipes are flooding the internet and are getting immensely popular among the foodies. Frankly speaking, initially I was little skeptical about the taste of air fried snacks so, was in a dilemma whether to purchase an air fryer or not. After thinking a lot, eventually I ordered one and these " potato corn balls " are the first thing that I made using the same. To my surprise, it exceeded my expectations with a perfect crisp texture from outside and a soft, melt-in-mouth texture on the inside. Moreover, a total guilt-free appetizer, me and my family fully enjoyed it to our heart's content. Petha !! well I know most of the people hate eating petha or kaddu. Especially if I talk about children, they always shy off such healthy green vegetables. In my case too as a kid, I never liked it much until my Mum came up with this finger-licking version of the same that simply tasted divine with a perfect balance of sweetness, sourness and spiciness. Since then, one of my absolute favorites, I often make it now for lunch during the weekends and enjoy it with crisp pooris or even plain parantha and some boondi raita on the side. This is also one of the most demanded delicacies at my home during the Navratri fasts. Sans of garlic, onion and some of the whole spices, it still tastes delectable and makes for a real treat paired with kuttu ke atte ki pooris and plain yogurt. ...writing this post after a long hiatus; the last couple of weeks went quite hectic for us as we shifted our base from Singapore back to India. In between, also spent few days soaking our souls in the breathtaking scenery of New Zealand....and as we moved to India, experienced a complete weather shift from extreme cold to extreme hot. In this hot weather, all we could think of is just constantly keeping ourselves hydrated with some chilled summer drinks, fresh fruit juices and mocktails all day long.
